Big Mac Smash Taco Submitted by Taylor McFarlin, Sikora For the smashed tacos: 12 mini flour tortillas 1 lb. ground beef Salt & Pepper 1 Tbsp. Vegetable Oil 12 slices American cheese ½ white onion, finely diced 12 slices of pickles Iceberg lettuce, shredded Prepare the sauce by combining all the ingredients in a small bowl. Divide the meat into 12 equal portions and shape them into balls. Take a small flour tortilla and place a ball of ground beef on top. Flatten the beef until it covers the tortilla in a thin layer. Sprinkle with salt & pepper. Heat a pan over medium-high heat. Add ½ tsp of oil. Put the tortilla meat side down onto the pan. Use the back of a spatula or a burger press to press down, creating a smashed burger effect. Cook for 3-4 minutes until the ground beef is browned. For the sauce: ¼ cup Mayo 3Tbsp. Ketchup 1 Tbsp. Sweet Relish 1 tsp. Yellow mustard ½ tsp white vinegar ½ tsp sugar ¼ tsp paprika ¼ tsp garlic powder ¼ tsp onion powder

My name is Stefanie and I am the Staff Accountant/HR at Sikora Peachtree City, GA. Let me introduce you to my two youngest kids. My two oldest kids are human teenagers, and who wants to talk about teenagers? Ewe.. Am I right? Instead, let me introduce you to my cats, Ella and Bronx. Ella and Bronx, although you cannot tell by looking at them, are brother and sister. Ella is a Calico, and Bronx is a Shorthaired cat. Both cats are indoor cats and spend most of the day sleeping on the bed. They are 9 years old, and we have had them since they were 5 weeks old. They were found abandoned in a RV with their mom. A kind gentleman rescued them and advised us that these two could not be separated. Therefore, we were not getting one, but two kitties. Ella is a complete princess, and loves to cuddle and be loved, but only on her time. She will meow at us until we show her the love she is expecting. Bronx is a total cuddle bug. He loves to cuddle with you, especially if he is cold. He will sit on the couch with you forever. That is until you turn on the TV. For some reason, he is terrified of the TV. Ella has many fears as well with her biggest fear being thunder. She will crawl low to the ground as if the thunder is going to somehow get her. Despite all their quirks, Ella and Bronx are a big part of our family, and we love having them around. We all hope that we have many more years with both of them.
Flip the taco over so that the tortilla side is down. Place a slice of cheese on top and allow it to melt for about a minute. Remove from the heat. Add diced onion, shredded lettuce, pickles, and the sauce as toppings.
