An easy recipe that doesn’t use mayonnaise! Fresh and flavorful and excellent to serve on a bed of fresh spring greens.
CULINAR CONNEC Ingredients: 1 • 1/4 cup white wine vinegar • 1/4 cup red onion, finely chopped • 1 tsp salt • 1/3 cup extra-virgin olive oil • 2 tablespoons Dijon mustard • 2 teaspoons honey • 1 teaspoon chopped fresh thyme • 1/2 teaspoon ground pepper • 3 cups shredded, skinned rotisserie chicken • 2 celery stalks, finely chopped • 1 medium tomato, chopped • 1/4 cup basil, chopped Directions: Veggie Pizza Squares Submitted by: Tricia Jones Ingredients: • 2 – 8 oz pkg refrigerated crescent rolls • 2 – 8 oz pkg cream cheese, softened • 1 – 1 oz pkg Ranch dressing mix • 2 carrot, finely chopped • 1/2 large red bell pepper, chopped • 1-1/2 cups fresh broccoli florets, chopped • 1/2 cup green onions, chopped
• Combine vinegar, onion and salt in a large bowl and let stand for 10 minutes
• 1 cup cheddar cheese, finely shredded
• 1/4 cup Miracle Whip
• Add 1/3 cup olive oil, mustard, honey, thyme and pepper – whisk together
• 1/4 cup Ranch dressing
• Add chicken and celery and toss
• Gently fold in tomato and ¼ cup basil
• Spoon over a bed of fresh spring greens or sourdough bread
• Drizzle a little oil, sprinkle a little salt and serve
