OREGON, HERE WE COME! The Ulmers Hit the Road

Emilie, the kids, and I will soon be heading off on our trip to Oregon for the Fourth of July and her dad’s 80th birthday. Thanks so much for all of your Oregon Coast recommendations! You really came through for me after I put that call out in the last newsletter, and I have a lot of fun stuff planned for the trip. Before I dive into that, though, I thought you might want to know a bit about why Oregon is so special to Emilie. Yes, her dad lives there now, but the connection goes back even further than that. Both of Emilie’s parents are originally from Oregon. Her dad grew up in the little town of Cottage Grove (right outside of Eugene), and her mom’s family was from Medford. Both of them went to college in Oregon, too, but they eventually moved away. Even then, they took their three daughters back for vacations, and Emilie fell in love with the coast. When it was her turn for college, she followed in her dad’s footsteps and went to the University of Oregon. To this day, she’s one of the biggest Ducks fans out there! I’m dead serious. We bought the Pac-12 network just so she could watch the football games on the big screen. She doesn’t sit — she stands to watch the Ducks. That’s how high the tension ratchets! When they score, she high kicks and dances her way around the living room. Let’s just say it’s quite an ordeal to watch Emilie watch the Ducks, even when they’re winning. She already has her fingers crossed that Nathan will pick University of Oregon for college when he’s old enough. She really, really loves that school. Emilie also loves the Fourth of July, which is why this is the perfect time for us to take our first real Oregon vacation as a family. We get to celebrate her dad and the Fourth at the same time from our Airbnb right

on the beach, then drive up the coast with the boys and see all of the sights, like

the sea lion caves, the famous Haystack Rock off of Cannon Beach (apparently this rock was in “The Goonies” — Emilie can’t wait to show it to me), and of course, the ocean. We plan to eat plenty of seafood along the way, and I’m sure Zach will find something just as expensive as the lobster corn dog from Florida to try out. Both of our boys like seafood a lot, probably because when they were little, Emilie and I used to drop pieces of breaded fish and shrimp onto their plates and tell them it was chicken. I can still remember the face Nathan pulled the first time. “This is funny-tasting chicken!” he would say. “Don’t worry about it, just eat it,” we told him. He did, and he and Zach have both liked seafood ever since. Honestly, they’ll eat pretty much anything — and I definitely think those old white lies helped them avoid becoming picky eaters! As I write this, I’m already looking forward to those seafood dinners, birthday cake, and long walks at the beach. I’m also excited to see my father-in-law and wish him a happy 80th. Before Google was a thing, he’s the one Emilie and I turned to with all of our random questions because he is such an intelligent man and always had an answer! He started every response with “Well, the fact is …” before launching into a fascinating story. I’ll have to report back on all of the fun facts I learn on this trip!

DON’T LET PICKLEBALL INJURIES GET YOU! 3 WAYS TO PREPARE FOR THE COURT

More than 400,000 people around the country play pickleball — and a heck of a lot of them live right here in Illinois. If you’re a “pickler” and plan to spend time on the court this summer, you could be putting yourself at risk of injury. Use these tips to stay safe and game ready. 1. STRETCH IT OUT. Yes, you should treat pickleball like your high school sports: Do a warmup! We recommend twisting your body side to side, stretching your arms overhead, bending at the waist, doing a few lunges, and taking a short jog around the court.

Your brain may want to play pickleball every single day, but your body probably doesn’t. Listen to your aching muscles and take time to recover between game days so you don’t overdo it. Pickleball can cause a lot of the same injuries as tennis, because you’re moving a lot on the court and swinging your racquet in repetitive motions in front of you, behind you, and over your head. Easy Vegan Baked Beans

July is National Baked Beans Month, and you don’t need bacon to celebrate this iconic side dish! This plant-based version will be a crowd- pleaser at your next vegan barbecue.

INGREDIENTS • 2 tbsp olive oil

• 1 yellow onion, chopped • 4 cloves garlic, minced • 3/4 cup molasses • 1/2 cup brown sugar • 3/4 cup ketchup • 3/4 tsp salt • 2 tbsp apple cider vinegar

• 1 1/2 tbsp vegan

Worcestershire sauce

• 2 tsp Sriracha • 4 15-oz cans navy beans, drained and rinsed. • 1/2 tbsp liquid smoke (optional)

DIRECTIONS 1. Preheat the oven to 350 F. 2. In a large pot over medium heat, warm olive oil. Add the onion and sauté for 5 minutes, then add the garlic and cook for 1 more minute. 3. Add all of the remaining ingredients except the beans into the pot. Mix the sauce well, then stir in the beans. 4. Ladle the beans into a 9x13-inch pan and bake for 1 hour. Serve warm and enjoy!
