Chicken Taco Bowls By Obaida Elamin

Meet Daisy Mae - 7 yrs. (top) and Pippy Long Bottom – 2.5 yrs. (bottom). Daisy has a baby duck that she protects and will hide so her humans can't find it.

Roughly 3lbs of Chicken Breast or Thighs (Boneless)

17 oz of Red Enchilada Sauce

1 Can of Black Beans

1 Can of Corn (Preferably fire roasted)

3 Packets of Taco Seasoning

Salt to Taste

Cooked Rice: •

2 1/2 Cups of Long Grain Rice 3 3/4 Cups of Chicken Bone Broth

Chipotle Sauce : •

1 2/3 Cup of Greek Yoghurt

Juice of one lime or lemon (2 tbsp) 2 oz of Chipotle peppers in Adobo Sauce

1 1/2 tbsp of Honey

2 tsp of Avocado (or other) oil

3 tbsp light mayo

Some Cilantro (Optional) 1)

Add the ingredients to a Crockpot/Slow Cooker. o Cook for 2-3 hours on high or 3- 4 on low. o Shred the Chicken in the Crockpot o Cook 2 1/2 cups of long grain rice in the bone broth. o Add the cooked rice to the Crockpot o Blend Chipotle Sauce Ingredients o Serve with Chipotle Sauce o Garnish with Cilantro (Optional)
