designed and built the house. Now, if a cabin is not your scene, in this issue we’re also featuring five homes on the market for at least $10 million with an amenity that never goes out of style: wine cellars that are both practical and beautiful. Also in this issue, we have an interview with superstar chef Daniel Humm, whose Make It Nice Group owns New York City’s Eleven Madison Park. Humm gave us his recipe for a morel mushroom and seaweed baked rice that’s a perfect warm dish for cold winter nights. Lastly, if you’re looking for a getaway, we’re taking a look at trips that offer a little something extra: programs and treatments focused on living better and longer. We hope you enjoy all these features in this issue of Mansion Global Experience Luxury, whether you’re in a Midwest log cabin or lounging in Miami Beach. ■

What words come to mind when you think of log cabins? (Don’t say “logs.”) Let me guess: “quaint,” “remote,” and “rustic.” What you’re probably not thinking is “luxurious.” This being the heart of winter and life being its usual chaotic self, we thought it would be fitting that our cover story for this edition of Mansion Global Experience Luxury feature cabins that are the best of the both worlds: isolated and warm, yet modern and lush. We spoke to architects and builders about creating bespoke log cabins without sacrificing their classic charm. For instance, one of the homes we’re featuring—located in Mount Vernon, Oregon, and on the market for $6.995 million—took three years to build, has large windows in each room to frame the woods and Strawberry Mountains, and was designed to be self-sufficient. “Every piece of wood in the house is hand-picked and hand-scribed, which means the logs are sawed to fit together,” says Storm Carpenter, who

‘High end’ and ‘log cabin’ are phrases that don’t seem to go together, but architects and skilled builders are making them a clever match

BY MICHELE LERNER

A braham Lincoln may have been raised in a log cabin, but it was nothing like the in New York’s Hudson River valley. “There are other log cabins in this area, but most of them are built with about 2,500 square feet as a weekend home,” says Paula Redmond, an associate real estate broker with Corcoran Country Living in Millbrook, New York. “This looks like you picked up a cabin in Aspen and put it down close to Millbrook.” 11,500-square-foot one that rests in Millbrook In fact, the owner of this cabin, which was built in 2007, had it framed with dead timber in Colorado that was cut into enormous logs, some of which are 41 inches in diameter. The house was then dismantled and brought across the country in a convoy of trucks. “This area has been a weekend retreat for 100 years, with fox hunting, riding, and shooting,” says Jason Karadus, broker/owner of Corcoran Country Living. “The owner of this house wanted to recreate a Sundance style here in New York,” he says, using the Park City film festival as a reference to the lavish Rocky Mountain retreats favored by wealthy vacationers. The home, which sits on 75 acres and has five bedrooms, four full bathrooms, and three half-baths, is on the market for $11.95 million. “It’s designed for entertaining, with this huge fireplace in the great room that you can stand up inside,” Redmond says. “The owner spared no expense in building this house and hired artisans to handcraft the ironwork and woodwork.” The great room has 32-foot-high ceilings, and the property includes a game room, a dining room to seat a crowd, a replica of a British pub, a soundproof music

A 3,000-square-foot deck off the main level includes an out- door fireplace and a hot tub, while private decks extend off the bedrooms. The grounds include a barn and three ancillary residences. “We have a lot of log cabins in this area, and some buyers insist that they will buy only a log home,” Karadus says. “But every agent and buyer who looks at this says they’ve never seen anything like it. It stands out.” While 90% of single-family homes in the U.S. are

The great room has a vaulted wood ceiling supported by two wood beam and includes a massive stone fireplace, floor-to-ceiling windows, sitting and dining areas, as well as an open kitchen with a breakfast bar; it measures 40-by-70 feet. “Each of the five bedrooms are on the main level, with the east wing devoted to the primary bed- room suite, which has a fireplace, and the west wing completely set apart with its own family room,” Staniscia says. “That way there’s a separation of space along with the open gathering area.” An open loft tucked underneath the wood ceiling offers additional seating, an artist’s studio, and an office with a view of the creek and the great room below. The lower level includes a wide hallway with a wood shelf with a “live edge,” which refers to a natural edge rather than a smoothed or treated one. The hall leads into a 25-by-38-foot Adirondack room that functions as additional entertaining space and has walls of windows. “The owners traditionally host a big New Year’s Eve party in this house and entertain friends and family on the weekends,” Staniscia says. “This house is unusual with its extensive use of wood, which creates a timeless and relaxed quality.” WITH A MODERN TWIST Many people from out of state don’t realize that Georgia has mountains with big views, says Brian White, a real estate agent with Ansley Real Estate, a Christie’s International Real Estate Company, in Blue Ridge,

framed with wood, according to the National Association of Home Build- ers, few of them are as spectacular as the custom-designed log cabins built for people who are passionate about wood. Luxurious log cabins can be found in a variety of places, including some unexpected locations. LIVING IN SPLENDID ISOLATION While the nearly 6,000-square-foot log cabin in Mount Vernon, Oregon, offers a prime example of the crafts- manship that goes into building a residence with giant logs, the recre- ational ranch it rests on overlooks the Strawberry Mountains and valley and includes 3,650 acres with timber, creeks, ponds, a lake, and horse and cattle facilities. “I specialize in building log cabins, but this house is unusual,” says Storm Carpenter, who designed and built the house. “The owners contacted me in 2000 and it took nearly three years to build this. Every piece of wood in the house is handpicked and handscribed, which means the logs are sawed to fit together.” As Robert Watt, executor of the estate for the original owners, says, “You can’t take a dollar bill and fit it between the logs, it’s that airtight.” The original owners bought the land in Oregon and “thought the land deserved a unique log home,” Carpenter says. Huge logs are visible in every room in the house, including a massive wood mantel above the great-room fireplace. Every room features large windows to frame the woods and

The home has three bedrooms, three full bathrooms, a half bath- room, and a large second-level bonus room that the owners used for enter- taining and to accommodate multiple family members and guests. The property is listed at $6.995 million. “There’s lots of infrastructure that was designed so that this house can be self-sufficient, including even a heated garage and a back-up heating system,” says Mary Doyle, a sales associate with Coldwell Banker Bain in Bend, Oregon. “They thought of everything, even fire hydrants.” The logs are all harvested from standing dead trees that were killed by fire or other natural causes, Carpenter says. former William Rockefeller estate, known as The Point, inspired the owners of a 9,153-square-foot log house in Plymouth, Vermont. “The owners stayed at The Point and enlisted Daniel Pratt, head of Robert Carl Williams Architects, to emulate the look and feel of that resort,” says Debra Staniscia, an associate broker with Four Seasons Sotheby's International Realty in Ludlow, Vermont. “The genius of this place is the feel of it. You walk into this grand space, but it’s so calming.” Dubbed “Serena Lodge,” this rustic yet luxurious wood home is part of the Hawk Resort community between Killington and Okemo and rests on 2.3 acres. The five-bedroom, six-bathroom house is listed for $4.85 million.

Traditional log cabins are popular in the area with people look- ing for a weekend getaway, he says. “Blue Ridge is the closest mountain town to Atlanta, and even people from Florida come here because it’s only a day’s drive from Tampa,” White says. “But now we’re seeing ‘Mountain Modern’ architec- ture start to take hold in this area, especially for people who want to live here full-time rather than just for a weekend visit.” A prime example is the three- story house in Epworth, which is a vertical take on a log cabin that President Lincoln could never have imagined. “When you build on the side of a mountain, it’s all about the view,” White says. “The house is designed in a creative way to maximize space, which is important because even though this is a 2.25-acre lot, not all of that land is usable.” The owners, who built the house in 2021, appreciate the aesthetic concept of making the house mod- ern, open, light, and airy, but with a mountain look and feel, White says. “The more wood, the better, they said,” White explains. “The house is constructed with live-edge, locally harvested pine in Blue Ridge. The logs are treated at the local sawmill so they can be stained and water- proofed, but otherwise they have a natural aesthetic. Some of the edges still have the bark attached.” The home has three bedrooms and three bathrooms, each on their own level for privacy, White says. It’s listed for sale at $1.785 million. The

W ine cellars and wine rooms, the latest must- have high-end accessory for upscale, elegant entertaining, really bring the party home. With their carefully shelved stocks of the rarest vintages, luxury finishes, and haute design, wine cellars are spectacular statement spaces, de rigueur for hosts of high-caliber events. No longer relegated to the subterranean spaces of the house, wine cellars and wine rooms are integral elements of the home’s entertaining area, serving as showcases not only for fine wines but also for good taste. Here are five U.S. properties, priced at $10 million and higher, that have wine cellars that really raise the bar.

LOS ANGELES Listing price: $28.5 million

Perched on the final promontory of Sunset Strip, this contemporary house, clad in Italian split-face travertine on the interior and exterior, features a temperature- and humidity-controlled wine room that’s conveniently located near the bar and entertainment space. The 250 bottles are displayed, like art, on wooden racks and are sheltered behind sleek glass doors that showcase them. The nearly 10,000-square-foot house is an ideal spot for sipping while taking in the panoramic views that stretch all the way to the Pacific Ocean. Outdoor dining spaces, an infinity-edge pool with a built-in spa, and a landscape filled with mature olive trees complete the L.A. paradise. The cellar accommodates 550 bottles of wine with room for at least 100 bottles of other liquor. With his background as a compet- itive cyclist and passion for staying active, the chef often looks for simple yet tasty meals to keep him fueled between workouts. He cites this savory plant-based dish as one of his favorites to make for himself. “I like using a donabe because they take on heat very evenly for slow and consistent cooking, which is ideal for this recipe. The donabe pot is a beautiful vessel to cook with and one of our go-tos at Eleven Madison Park for our plant-based dishes,” he says. For his donabes, Humm has collaborated with Naoto Inaba, a fifth- generation potter from Iga, Japan, whose natural clay vessels “take on heat very evenly, allowing you to cook ingredients slowly, steadily, and consistently,” Humm says. Home chefs can bring these hand- crafted donabes into their kitchen by purchasing one through the Eleven Madison Home online shop. As with a growing number of plant-leaning epicureans, Humm finds great value in incorporating sea vegetables and gourmet mushrooms into his cooking. “Seaweed adds a beautiful umami to a dish, and morels typically have a subtle earthy, nutty flavor, even some smokiness that I love,” he says. “These beautiful flavors showcase the magic of cooking with plants and for those who are looking to incorporate more of a plant-based diet. The combination of ingredi- ents here—rice, mushrooms, and seaweed—makes it a satisfying, warming dish.”

We also just retained three Michelin stars in 2023 for the 12th year in a row, which is a testament to the hard work of each and every member at EMP who has contributed to our journey,” says Humm. Like most top chefs, Humm—who recently released his latest book, Eat More Plants —regularly finds himself drawing inspiration from seasonal ingredients, even during the darkest and most unforgiving times of the year.

When asked to suggest a warm- ing plant-based dish for the coldest months, Humm suggested morel mushrooms with seaweed baked rice, a recipe that was inspired by cuisines from around the world. “There are many places where people have been cooking delicious plant-based food for thousands of years, and we can learn a lot from their approaches to ingredients, preparation, and sourcing,” he says.

“We believe strongly in honoring the colder months through cooking and nourishing yourself with fresh, in-season produce. Using plant- based ingredients forces you to be in tune with the seasons,” Humm says. “For winter we suggest cooking with squash, collard greens, root vegeta- bles, cauliflower, beets, whatever is in season around you.” For wintertime inspiration, Humm, 47, looks to his homeland— he’s ventured to Arosa, Switzerland,

nearly every winter since he was a small child. “Nothing has changed. It’s very small and sophisticated. During the summer, maybe only a couple of thousand people live there. In the winter, it triples,” he says of the small Alpine resort town. “There’s not a lot in life that’s always the same, but it’s a special place for me for that reason. Some people talk about the ocean as their place to relax and get inspired, but for me it’s the mountains.”

F ew chefs are as globally born, New York–based chef shook the culinary world a couple of years back when he took his Big Apple temple of high gastronomy, Eleven Madison Park, in an entirely vegan direction. “Before launching the new menu, I would lay in bed at night wondering if anyone would come to a completely lauded—or adventurous—as Daniel Humm. The Swiss-

plant-based Eleven Madison Park,” Humm says. “But at the end of the day, the decision to change EMP was based on a greater sense of purpose and using our restaurant’s platform to redefine our industry. I expected there would be criti- cism, but with the criticism came a greater, immeasurable sense of purpose. This sense of purpose is what drives me and my team.”

His new approach was ultimately validated by winning plaudits from across the culinary world, most notably in 2022 when Eleven Madison Park—which celebrated its 25th anniversary late last year— became the first plant-based restau- rant in Michelin Guide history to garner three stars. “While it wasn’t an easy transition, I can look back and be proud of how

Step 4 In a separate bowl, toss the morel mushrooms with a pinch of salt and olive oil. Step 5 When the rice comes to a simmer, layer mushrooms over the top of the rice. Step 6 Place the lid tightly over the top of the rice, then place the donabe into an oven set to 350 degrees Fahrenheit, and bake for 45 minutes. Step 7 Pull out the donabe and let it sit at room temperature for 5 minutes, then open the lid and mix the rice, incorporating all of the crispy bits from the sides of the pot. Step 8 Prep the salad by combining onions, cilantro, parsley, chili, lime juice, and salt in a separate bowl. Place 1/4 of the rice in a serving dish, top with 1/4 of the mushrooms, and serve with salad on the side. Makes 4 portions. ■

architects put the emphasis on the design—a cantilevered, concrete, steel- and-glass structure with floating glass decks, floor-to-ceiling windows and a 26-foot cantilevered carport that looks like a gull wing rising from the earth. It was no ordinary job. In order to build the foundation, the team had to cut deep into the hillside itself so they could install two 50-foot concrete piers weighing 130 tons each to securely anchor the structure into the ground. And then they had to wait for the concrete to cure in order to begin the build, which took 15 months from design to completion. Martik Brothers, Inc., based out of Pennsylvania, was tasked to be the general contractors for this luxurious home-expansion project. Sculptural, terraced landscaping and woven-steel fencing around the entire property were added to tie the house into the grounds. And the pièce de résistance: a green roof that serves as a meditative space for the homeowner. Both the architectural and interior design teams coordinated with 84 Lumber, the largest privately held supplier of building materials in the U.S., on general construction and renovations to the home’s private and common spaces.

plumbing fixtures were sourced by the designer through 84 Lumber. “There’s no better partner than 84 Lumber, who helped bring this project into reality,” added O’Toole. “The 84 team helped to make the client’s dream a reality and showed that nothing is impossible.” A Unique Contrast Because the building materials and overall structure were quite industrial in design, due to elements including exposed concrete pillars, steel beams, concrete floors and Venetian plaster walls, the idea was to soften the look and feel through the decor so that it was more approachable and felt like home. Jarold added blush tones and textural touches, like faux fur, velvet, bouclé, and leather accents throughout to warm up the interior. One of Jarold’s biggest challenges was to find a way to connect the disparate languages of the main house with the addition through the decor. The only shared space between the two structures was a garage-turned-sunken- family-room. “The sunken room was the transitional space, and that’s where we started to add more concrete flooring, which continued into the addition.” Central to the space is an oversize rectangular sofa, decorated from cushion to cushion with neutral tone bouclé cushions as a base, which fills the entire sunken area. “The design intent was to create a comfortable environment with pops of color and texture found in the pillows,” Jarold said. In the end, the entire structure became a living, breathing art form that felt like home.

When designing an addition for a home nestled on the grounds of Nemacolin luxury resort in Pennsylvania’s Laurel Highlands, the home’s architect, OBA Architects, got a very specific request from the homeowner: She wanted something that looked like a spaceship had landed. When you consider the very traditional style of her current house, the directive might seem highly unusual. But not when you understand why. “She pulled us aside and said she wanted something to represent who she was,” said Jim O’Toole, partner and senior designer at OBA Design LLC in

Springdale, Pennsylvania. “She felt she didn’t have a home that really reflected her creative personality.” Rather than level the current structure or buy something entirely new, it was important to the owner to keep the original home, which had tremendous sentimental value. What’s more, the home is located on the grounds of Nemacolin resort, which has been creating magical moments in Pennsylvania’s Laurel Highlands since 1987. The four-season playground is nestled on more than 2,200 acres in southwestern Pennsylvania, showcasing

a range of Forbes Travel Guide’s award- winning accommodations, from the grandeur luxury of The Chateau and the modern sophistication of Falling Rock to the elevated luxury of The Grand Lodge (recently opened in Fall 2023). With magic all around, Nemacolin comes to life with show-stopping dining and lounges, two Pete Dye–designed championship golf courses, award-winning Woodlands Spa and Salon, Holistic Healing Center and a collection of outdoor activities. The resort plans to add more exclusive and uniquely designed residential offerings to their portfolio in the future.

A Feat of Structural Engineering The goal was to build a structure that was almost totally foreign to the existing house and draw your eye to that, rather than the current home. “We tried to create something that was contemporary and sculptural, kind of growing out of the hillside,” said Caryn Bevins, partner and architect at OBA Design in Springdale. Perhaps most important to the homeowner was the expression of the building’s structure, the materials, and the staggering views overlooking the property’s scenic golf course. So, the

the two structures, which total 16,000 square feet. Central to the space is the bedroom, which boasts a soaring 29-foot ceiling and clear-glass floor panels that give a view straight to the floor below. Because it was such a large open space, the designer, Becky Jarold, placed a backlit Cristallo Rose quartzite wall that acted as the headboard in the sleeping area. “This way, the bed appears as if it is floating—a request the client had— due to its small scale and no visible

support in contrast with the large and illuminated headboard,” the Pittsburgh- based Jarold said. That same pink quartz was continued in the bathroom for the vanity and shower wall as well as in the main closet where it was used to construct a massive, shelved island. The show-stopping closet space was crafted to be a gallery of sorts for the owner’s fashion collection. Custom cabinetry and shelving were created by 84 Lumber. All finishes, doors, museum baseboard, modern hardware and

The Design Is in the Details The addition is a five-level,

11,000-square-foot dwelling that houses the homeowner’s private quarters—her bedroom, closet, a guest suite, as well as a gym and family room. All of the public spaces of the home would remain in the existing 5,100-square-foot house, so the architects had the unique task of trying to find some common ground between

been able to enhance their offerings and appeal to more travelers,” Kriel says. While some growth is connected to the variety of treatments available, results and the digital world are also contributing to the wellness boom. “The efficacy and benefits of these treatments continue to drive bookings and interest, especially with the support of social media, influencers, and celebrity endorsements,” Kriel says. While genetics, environmental factors, and lifestyle choices such as regular exercise, a diet free of processed foods, sufficient sleep, and human connection play essential roles in living well and longer, experts believe in holistic therapies to help manage stress, boost immu- nity, and ultimately influence length and quality of life. ANTIAGING AND BEYOND “For years, people have been coming to spas, booking treatments, and gaining advice on how to turn the clock back with antiaging and corrective skin treatments,” Kriel says. However, today’s treatments are far more innovative. On Marinella Beach in Porto Rotondo, on the Italian island of Sardinia, guests at the five-star Abi d’Oru Hotel & Spa can experience the resort’s one-of-a-kind “longevity treatment,” a unique antiaging facial using one of the island’s native grapes: Cannonau. The world’s first declared “Blue Zone”—one of five designated areas where people live longer than average, some into their 100s—Sardinia produces this robust red wine varietal, the most widely planted on the island. Known as Garnacha in Spain and Grenache in France, Cannonau supposedly contains two to three times more antioxidants than other red-wine grapes. By incorpo- rating Cannonau, Abi Spa says its unique 50-minute longevity session increases collagen production for firmer, younger-looking skin. Maintaining a youthful appearance is just one facet of longevity treatments, which range from stress-reduction sessions like massage to nutritional support and sleep programs, Kriel says. Some retreats also offer medical services such as IV infusions and joint injections. Keeping with the trend, Kriel is expanding Salamander Collection’s existing spa services, such as detox wraps

holistic approach, using lifestyles in long-living Blue Zones as a point of reference. “We improve our daily lifestyle habits, so we live vitally as long as we’re meant to live,” Shave says of the retreat. He built the program from an anthropological stance, referencing humans as farmers, hunters, and gatherers based on their eating and sleeping patterns. Food includes vegetable-centric meals sans alcohol, sugar, bread, or dairy. Guests wake at dawn each day and have access to sunrise yoga, several hours of “flow” or slow hiking, spa treatments, forest bathing, calming crystal singing-bowl and sound therapy sessions, and classes on stress reduction—one of Mountain Trek’s primary goals. The program motivates people to spend much of their time in nature because it’s been proven to reduce cortisol, the stress hormone that can lead to inflamma- tion and disease when elevated for extended periods. While most guests aren’t aware of how immersive Mountain Trek’s program is when they arrive, they leave the resort revitalized after the structured, one-week program. Set in the Kootenays overlooking its epony- mous river, the resort and adventure promise what Shave calls a “visceral experience of transformation.” “They're interested in coming to be in nature,” Shave says of the guests. “They hit a wall in their life and slipped backwards, so they know they need a reset.” ■
