MOREL MUSHROOM AND SEAWEED BAKED RICE

Step 4 In a separate bowl, toss the morel mushrooms with a pinch of salt and olive oil. Step 5 When the rice comes to a simmer, layer mushrooms over the top of the rice. Step 6 Place the lid tightly over the top of the rice, then place the donabe into an oven set to 350 degrees Fahrenheit, and bake for 45 minutes. Step 7 Pull out the donabe and let it sit at room temperature for 5 minutes, then open the lid and mix the rice, incorporating all of the crispy bits from the sides of the pot. Step 8 Prep the salad by combining onions, cilantro, parsley, chili, lime juice, and salt in a separate bowl. Place 1/4 of the rice in a serving dish, top with 1/4 of the mushrooms, and serve with salad on the side. Makes 4 portions. ■

2 cups sushi rice 2 ¾ cups water 1 tbsp sesame oil 1 tbsp shoyu 1 tbsp rice vinegar 1 tbsp soy sauce 1/8 cup rinsed shio kombu (salted kelp) ¼ cup sliced ginger 2 cups morels; clean under running

lukewarm water by agitating with your hands (or use a mix of mushrooms such as sliced shiitake, oyster, and maitake)

Salt to taste
