Coca-Cola Zero Sugar Roasted Ham Servings: 6 | Prep Time: 10 mins | Cook Time: 4 hrs 30 mins Coca-Cola Zero Sugar and ham? Surely not; we hear you cry. Oh yes, dear friend. This sticky, juicy combination is a tasty match made in Christmas heaven! Who said that delicious Coca-Cola was just for drinking? Coca-Cola is synonymous with Christmas, so why not involve your favourite bubbly beverage in your Christmas dishes?

Equipment: • Slow cooker or large pot with lid • Baking tray and aluminium foil • Small pot and wooden spoon • Sharp knife and chopping board • Cooling rack • Tongs

Ingredients: Roasted Ham

Glaze: • 65g brown sugar • 50g honey • 60ml Coca-Cola Zero Sugar (save before adding to ham to cook) • 3 tbsp. Dijon mustard • Handful of cloves

• 1.4kg boneless gammon joint • 1.5 litres Coca-Cola Zero Sugar • 1 medium onion (quartered) • 1 medium carrot (quartered) • 2 star anise • 1 3” stick or ½ tsp. cinnamon • ½ tbsp. black peppercorns

Instructions: 1. Add gammon to a slow cooker and pour over Coca-Cola Zero Sugar until just about covered, saving 1/4 cup/60ml. Top up with water if needed. Add in onion, carrot, star anise, cinnamon, and peppercorns. Place on the lid and cook on high for four hours. 2. Meanwhile, in a small pot, over low-medium heat, combine sugar, mustard, honey, and leftover Coca-Cola Zero Sugar. Simmer for 5 mins until the sugar dissolves and starts to thicken, stirring frequently. It will continue to thicken as it rests. 3. Remove ham from the slow cooker and place it on a wire rack above a tray or plate (to catch juices). Make sure it’s fat side up. Once cool enough to handle, score the fat in a criss-cross style to create large diamonds. Be careful not to slice into the ham. Stud a clove at the tip of each diamond. 4. Place ham on a foiled baking tray. Scrunch up some foil to prop the ham up, so it doesn’t fall over if you need to. Brush around 2/3 of your glaze all over the ham. 5. Place in the oven at 200C/Fan 180C for 15 mins, take out and reglaze with leftover glaze, then pop back in the oven for another 10 mins or so until it starts to caramelize and lightly char. 6. Allow the ham to rest for 10-15mins (important), then slice it up. You can remove cloves before slicing if you wish!

Coca-Cola Zero Sugar Cherry Fudge Servings: 6 | Prep Time: 10 mins | Cook Time: 30 mins

If Classic Coca-Cola Zero Sugar Cherry’s flavour is your jam, you’ll love these yummy fudge bites. Wrap them in individual confectionery bags for a sweet Christmas gift or stocking filler.

Ingredients: • 170g butter

Coke Frosting: • 100g butter • 3 tbsp. cocoa powder • 6 tbsp. Coca-Cola Zero Sugar Cherry • 450g icing sugar • 1 tsp. vanilla extract

• 600g granulated sugar • 150ml double cream • 2 tbsp. cherry gelatine • 340g white baking chip • 200g marshmallow creme • 1 tsp. cherry/vanilla extract • 300g cherries

Method: Cherry Fudge 1. Cut the cherries into quarters. Pat with a paper towel repeatedly to remove as much moisture as possible. 2. Line a 9x13 baking dish with non-stick foil. 3. Combine butter, sugar, and heavy cream in a double-bottomed saucepan. 4. Bring to a boil over medium heat, stirring frequently. 5. Once at a full boil, continue cooking for three minutes, stirring continuously. 6. Add cherry gelatine and stir continuously, boiling for another 2 to 3 minutes or until the gelatine is completely dissolved. 7. Remove from heat and stir in white baking chips. 8. Stir in marshmallow creme. 9. Fold in cherries. 10.Pour into prepared pan and let cool to room temperature, then refrigerate.

Coca-Cola Zero Sugar Cherry Frosting 1. Place icing sugar in a heatproof bowl and set aside. 2. In a small saucepan, combine the butter, cocoa, and Coca-Cola Zero Sugar Cherry over medium heat. 3. Bring just to a boil and pour over icing sugar. Whisk until combined and smooth. 4. Add vanilla extract and continue whisking or stirring to combine. 5. Immediately pour over chilled fudge. Use an offset spatula to spread the frosting over the top of the fudge gently. 6. Chill for 20 minutes or until the frosting has set. 7. Cut into small pieces and serve.

Costa Coffee .

Spicy gingerbread, silky caramel, and a hint of coffee? It sounds like a dream team for an epic festive dessert! So pop your oven on and whisk up this festive Gingerbread Loaf; a gingerbread sponge made using Costa Coffee Gingerbread Latte topped with spiced caramel frosting and decorated with mini gingerbread men.

Servings: 6 | Prep Time: 20 mins | Cook Time: 50 - 60 mins

Ingredients: Gingerbread Loaf • 250g self raising flour • 200g unsalted butter • 125g soft light brown sugar • 75g dark treacle • 3 large eggs • 1 tsp. baking powder • 100ml Costa Coffee Gingerbread Latte • ½ tsp. mixed spice • ½ tsp. ground cinnamon • ½ tsp. ground ginger

Spiced Caramel Buttercream • 120g salted butter • ½ tsp. ground ginger • ½ tsp. ground cinnamon

Decorations • Mini gingerbread men • Sprinkles

• ½ tsp. vanilla paste • 50g caramel sauce • 230g icing sugar

Method: 1. Begin by greasing a 900g loaf tin with butter, then line it with greaseproof paper. 2. Preheat the oven to 180C/Fan 160C/Gas 4. 3. Place all the ingredients for the loaf into a stand mixer (or use an electric hand mixer) and beat until fully combined and smooth. 4. Pour into the lined tin and bake for 50 – 60 minutes until cooked through – to check this, insert a cocktail stick into the centre of the cake; when removed it should be clean. 5. While the cake cools, make the buttercream by beating the butter, ground cinnamon, ground ginger and vanilla paste in a stand mixer with the paddle attachment or with an electric whisk until light and fluffy. 6. Next, add the caramel sauce, then gradually add the icing sugar until smooth. 7. Top the cooled sponge with the buttercream and decorate with the gingerbread men and sprinkles, then serve.

These Christmas butter biscuits are the perfect way to spread some cheer and are simple to make – especially if you have some little helpers around the house. So let’s dust off those aprons and let’s make Christmas.

Lurpak ® Christmas Butter Biscuits Makes: 24 biscuits | Prep Time: 30 mins plus 30 mins chilling | Cook Time: 8 - 12 mins Ingredients: • 200g Lurpak ® Spreadable Slightly Salted • 150g caster sugar • 1 egg yolk • 1 tsp vanilla extract • 350g plain flour, plus extra for dusting • 300g icing sugar • 2-3 tbsp. lemon juice Method: 1. Heat your oven to 180ºC/ 160ºC fan/ gas mark 6. 2. In a large bowl, beat together the Lurpak ® Spreadable Slightly Salted and sugar until light and fluffy. You can also do this in a food processor. 3. Whisk in the egg yolk and vanilla

6. Bake on the middle shelf for 8-12 minutes or until just coloured on the edges. Remove the biscuits from the oven and cool on a wire rack before decorating with icing. 7. To make the icing, sift the icing sugar into a bowl and stir in 2 tablespoons of lemon juice, adding more if needed to make a thick paste. 8. Decorate the biscuits and leave on a wire rack for the icing to set. If you want to use them as Christmas decorations, skewer a hole in the top of each biscuit just before baking and thread through ribbon or string, once cooked.

Gift bag wrapping tips Keep these tips in mind to ensure that the gift bag you create holds up. • Medium-weight wrapping paper is ideal because it’s sturdy but not difficult to fold. • Your bag should be twice as tall as it is wide. • These gift bags are not recommended for extremely tall and/or heavy items. • You can always add a piece of cardboard to the bottom of the bag to make it sturdier. • If something feels flimsy, add more tape!

Pro tips when you’re wrapping lots of gifts •  Tag your gifts! Before you dive into wrapping, write out all your gift tags and keep them with the matching presents. That way, you can keep track of which gift is which and who is getting what. •  Plan your strategy. If you’re wrapping multiple presents at a time, group those together of similar sizes/shapes so you can efficiently and easily wrap them in one go. •  Set up for success. Find your go-to wrapping spot and set it up with everything you need. Find a place for your Sellotape and scissors, your embellishments and adornments, and finally, your tags and final flourishes. •  Get into the Christmas groove! Pop on your best-loved Christmas songs, dress in your cheesiest Christmas jumper and make gift wrapping one of your favourite festive rituals.

Elevated Roast Chicken. Servings: 4 | Prep Time: 20 mins | Cook Time: 1 Hour 30 minutes Ingredients:

Cooking instructions: 1. H eat the oven to 200°C, 400°F, Gas Mark 6.

• 125 grams (5 ounces) salted butter, at room temperature • 1 tsp. flat leaf parsley • 1 tsp. dried sage • 1 tsp. chives • 1 lemon • 1.5 kilograms whole chicken • 800 grams new potatoes • 3 tbsp. olive oil • 2 tsp. garlic salt • 4 large carrots • 2 large parsnips • 1 red onion • 2 tbsp. balsamic vinegar • 1 tbsp. honey • 1 tsp. dried thyme • 3 tsp. Signature Chicken Gravy • 300 millilitres (1/2 pint boiling water

2. M ash the butter in a bowl together with the parsley, sage, chives and the zest of the lemon, season well. Mix until well combined. 3. G ently loosen the skin of the chicken over the breast with your fingers, releasing as much as you can over the breast and thighs. Carefully, spread the herby butter generously under the skin. Push the butter as far along the breast and legs as possible taking care not to rip the skin. 4. P ut the chicken into a roasting tin and season the skin well. Cook in the preheated oven for 1 hour 30 mins. 5. To prepare the potatoes, place a potato on a chopping board between the handles of 2 wooden spoons (or 2 chop sticks). Slice through the potato until the knife blade is stopped by the spoon handles. Slice again, 2-3 mm away, and repeat until the potato is sliced all the way along. It will end up looking a bit like a book with lots of pages held together by the ‘spine’. 6. P ut the potatoes in a roasting tin and drizzle with 2 tbs of the oil. Rub each one to coat well with oil. Sprinkle with garlic salt and season with pepper. When the chicken has been cooking for 30 mins, baste it well and add the potatoes to the top shelf of the oven. 7. P eel all of the vegetables and cut the carrots and parsnips into finger sized strips. Cut the onion into wedges and put them all into a wide oven dish or roasting tin. Mix together the remaining oil, balsamic, honey, thyme and season. Drizzle the mixture all over the vegetables and shuffle them around in the baking dish so they are well coated. When there is 40 minutes cooking time remaining, add the veg to the oven. 8. D epending on the size and efficiency of your oven, you may need to swap the oven trays shelf position to ensure everything is cooked at the same time. If the potatoes or veg cook quicker than the chicken, just take them out when they’re done and cover with foil to keep them warm. 9. T he chicken will benefit from resting for 10 minutes after cooking and will keep its heat, so if that is done first, just set aside to rest. All will be reheated when it’s festooned with piping hot gravy! 10. W hen everything is ready, mix the gravy granules with the boiling water and serve.

Pick a super pickle.

Baxters Pickles, Cheese & Charcuterie Board. Servings: 6 - 8 | Prep Time: 20 mins Ingredients: Selection of cheeses for example • Soft cheese (e.g. Brie) • H ard cheese (e.g. strong Scottish Cheddar)

Method: 1. Take your cheese out of the fridge at least 30 minutes before serving to allow it to come up to room temperature. 2. Begin your platter by placing 3-4 cheeses equidistant on the board. 3. Build your cured meats around these, grouping them together. 4. Fill in big gaps with your pickled Gherkins, fanned out. 5. Place in two small bowls with your pickled onions. 6. Fill in any gaps with the roasted vegetable antipasti. 7. Finally add grapes, crackers, nuts & dried fruits to finish the board.
