Chef Duyen Nguyen isn’t just a pastry chef; he’s an artist, a maestro of sweet creations. Chef Duyen’s approach is a delicate balancing act, harmonising the authentic flavours of Vietnam with the refined elements of modern luxury. He understands that preserving the essence of Vietnamese sweets requires more than just using local ingredients; it demands a deep understanding of their cultural significance and culinary context. “First and foremost is to respect traditional ingredients,” he emphasises. “If you don’t respect the core values of traditional ingredients such as basic flavours, origin, seasonality... you cannot create a product with a meaningful message.” This respect for tradition, however, doesn’t preclude innovation. Chef Duyen skilfully employs modern techniques to enhance the texture and presentation of his creations, elevating them to world-class standards without sacrificing their authentic flavours. He notes, “The ability to flexibly improve the texture without changing the flavour, or the ability to adjust a recipe to make the ingredients combine better without losing the characteristic flavour”, he remarks is crucial to his process.
