Looking ahead, the chef’s ambitions continue to evolve. “I’m excited about the potential of new technologies in the kitchen,” he shares. “The use of ultrasound to enhance flavours, or artificial intelligence to optimize processes and discover new combinations—these developments have the power to push cooking into new realms of creativity.” Despite his success and forward-thinking approach, there remains a deep personal connection to his roots. “My greatest dream as a chef is to have cooked for my grandmother,” he says, his voice tinged with emotion. “I never had the chance before she passed away, but it would have meant so much to me to prepare one of her best dishes, a pumpkin tortello that I adored. I wanted to show her how deeply her cooking influenced my life.” His culinary journey brings him to Phu Quoc, where he looks forward to sharing a piece of ‘his Italy’ with guests. “I want to convey the passion and authenticity of Italian cuisine. Every dish tells the story of Italy’s rich culinary heritage, and I hope to offer a unique experience that combines flavours, emotions, and culture.” For this chef, cooking is not just about food—it’s about connecting people to stories, traditions, and emotions. Through his work, he continues to honour his grandmother’s lessons while looking to the future, blending tradition with innovation in every dish he creates.
Risotto holds a special place in his heart. “Rice and risotto are what I’m most attached to. It’s a dish that allows for technique and creativity, and I’m fascinated by its versatility,” he explains. “Each type of rice has its unique characteristics, and working with them to the fullest is always an exciting challenge.” He smiles, adding, “In my career, I’ve nearly reached a million risottos prepared.” For the chef, creativity in the kitchen isn’t confined to recipes alone. “I draw inspiration from everything around me: the seasonality of ingredients, music, fashion, art, even my moods and daily experiences,” he says. “Everything can spark a new idea—whether it’s a colour, a flavour combination, or an emotion I want to convey. Cooking is a form of expression with no boundaries.” The process of creating a new dish, according to him, is both thoughtful and experimental. “It starts with inspiration, followed by research and observation,” he explains. “I love exploring seasonal ingredients and considering how they can be enhanced. From there, I experiment, taste, and adjust until I find the right harmony between flavours, textures, and presentation. Every dish should tell a story, spark intrigue and surprise those who taste it.” Despite his creative flair and the culinary acclaim, chef Rossetti’s focus remains steadfastly on the guest experience. “Hospitality is at the core of what I do. A successful culinary experience begins with care and attention to every detail, from the welcome to the quality of service. Recognition is a natural byproduct of this commitment to offering something special.”

Patience is key, both in perfecting every detail and in handling the daily challenges. And above all, teamwork is what makes the kitchen function. It’s a collaborative environment where communication is the key to success.” Among the many dishes that capture his unique approach, one stands out for its perfect balance of tradition and innovation. “The risotto with ciuppin ligure is a dish I’m particularly proud of,” he says. “It’s inspired by a traditional fish soup, but with a modern twist that enhances the flavours of the sea. It was thanks to her that I developed my passion for cooking, learning that it wasn’t just about ingredients, but about telling stories and traditions.” This early exposure to food as a storyteller laid the foundation for his career and his belief that cooking is an art form, blending heritage with creativity.
