Get ready, West Hartford! Spring will soon transition to summer, and there’s a lot to be excited about! Let’s take a look at a few of the many ways to enjoy the outdoors and connect with our community. Celebrate! West Hartford The annual Celebrate! West Hartford event is coming! Scheduled for June 7–8, this festival draws crowds from all over the state for two days of fun, food, and festivities. You can look forward to over 160 craft and business exhibits, a wide variety of food vendors offering delicious treats, a carnival featuring rides for all ages, and live music performances. It’s a perfect opportunity for families, friends, and neighbors to come together and celebrate our town! Celebrate! West Hartford FUNd Runs Everyone looks forward to the Celebrate! West Hartford FUNd RUNS. This event, which takes place the same weekend as Celebrate! West Hartford, welcomes participants from ages 3 to 83-plus, making it a perfect outing for families while supporting a great cause. A portion of the proceeds benefits the Leisure Services Scholarship Fund, aiding children from low-income families in accessing vital programs like swimming lessons and camps. The scenic 5K course starts near the Noah Webster statue on South Main Street and winds through historical areas and the Trout Brook Trail. The Kids’ K offers a fun, non-timed 1K dash around Blue Back Square, and participants 10 and under receive a medal to celebrate their achievement. Outdoor Pools Opening It’s almost that time! The outdoor community pools are scheduled to open on June 20. Whether you’re looking to swim a few laps, play water games, or just hang out and relax by the pool, the community pools are the perfect places to beat the heat and enjoy the summer days. SLOW COOKER SHREDDED BEEF LETTUCE CUPS Inspired by TasteOfHome.com

Ingredients

1 boneless beef chuck roast (about 2 lbs) 3 medium carrots, peeled, chopped

1/2 cup reduced-sodium soy sauce 2 tbsp packed brown sugar

2 tbsp white vinegar 1 garlic clove, minced

2 medium sweet red peppers, chopped

1/2 tsp pepper 3 tbsp cornstarch

1 medium onion, chopped 1 8-oz can unsweetened crushed pineapple, undrained

3 tbsp water

24 lettuce leaves for serving

TAKE A BREAK vegetables to a small saucepan; bring to a boil over high heat. 5. In a small bowl, combine cornstarch and water, stir mixture into juices, and cook 3–4 minutes until sauce is thickened. 6. Return beef, sauce, and vegetables to slow cooker; cook for 10–15 minutes. 7. Serve beef in lettuce leaves. Directions 1. In 4- or 5-quart slow cooker, combine roast, carrots, peppers, and onion. 2. In small bowl, stir together the next 6 ingredients; pour over roast. 3. Cover and cook on low for 6–8 hours. Remove roast, let cool slightly, then shred. 4. Skim fat from cooking juices, then transfer juices and
