Epitome, the latest addition to the family-owned Canaves Oia hotel group, is a perfect fit. With its back to the cliffs, it is a haven of peace. Stone and wood provide a warm setting, surrounded by olive trees and a beautiful garden, which adorns the suites and villas. The feeling of privacy is real. Privacy has a real meaning in this family hotel. The wellbeing has been thought of and the contemporary fur- niture perfectly matches the bright environment of the rooms. The staff are professional and relaxed. The level of catering is a sign of Santorini's revival, under the leader- ship of a promising chef, Tasos Stefatos. To top it all off, all the restaurants of the Canaves Oia hotels offer nice surprises. Wine tasting is a must. Markos Chaidemenos, Managing Director: Canaves Oia is a family business. Canaves Oia Boutique Hotel, in the vil- lage of Oia, was the first. Then my family opened Canaves Oia Suites in 1993, which is our flagship property; then Canaves Sunday Suites, and in 2018 Canaves Oia Epitome, which really stands out from the four properties in the brand, built from scratch on a flat plot of land, which means we have been able to offer a lot of privacy and space to our guests. That's why we can also accom- modate families with young children. There are no age restrictions here. It is a small sanctuary outside Oia, with easy access to the village. On the other hand, we have three properties with views of the caldera. Canaves Oia Boutique Hotel which is more for couples, honeymoo- ners, romantic getaways. Canaves Sunday Suites which is our smallest property with only eight rooms: this proper- ty I recommend if you want to privatise it as a villa in the heart of Oia with a nice privacy. In fact, it's a lovely hotel, for people who don't want to see others or be seen: all in discretion. Then we have Canaves Oia Suites, our flagship property with 46 suites and villas, built on a small penin- sula in the village, with stunning views, famous again for the space and privacy it offers. As far as the restaurants are concerned, we really wanted to offer a different dining experience in each property, which is why all are based on original concepts. Infinity is a small modern bis- tro with Greek comfort food. Petra is a gourmet restau- rant, where Greek recipes are also the basis, revisited by the chef. Then there is the Veranda aperitivo bar, where Greek tapas are served : you can accompany your appeti- zers with a glass of wine. Finally, we have two restaurants at Epitome: Elements is the ultimate in Santorini gastro- nomy. Our chef, Tasos Stefatos, gives all his creativity and power, both in the presentation of the dishes and in the sublimation of the tastes. And then we have Omnia, our newest restaurant based on seafood, family style.

J’ai parlé au propriétaire et il a compris qu’il était temps d’évoluer en matière d’expérience culinaire au sein d’établisse- ments comme les siens. D’autre part j’avais travaillé dans plusieurs restaurants étoilés Michelin en Europe et à New York et je souhaitais vraiment changer la donne, mais en revenant aux fondamentaux du goût, aux méthodes tra- ditionnelles de cuisine, avec une grande liberté d’expres- sion pour la présentation des plats. Nous avons tant de bons produits, des tomates incroyables, des légumes, des poissons, des fruits, qu’il faut respecter cette saison- nalité et la magnifier.
