Groundnut, the main cash crop of the Gambia yet has considerably decline in local production, while the national demand for good vegetable oil is continuously in the increase. This investigation dissects the proximate and physicochemical properties of five new groundnut varieties and their oils extract. Variety ICGV97188 weighted the highest 575.43 g and ICGV00005 the lowest 281.41 g. The highest grain Moisture Content (MC) 8.65 % with ICGV00005 variety to the lowest 3.4 % of Variety ICGV -15 -13850. However, the mean of moisture content of the extracted oils at Sapu (2.25, 3.05 %) were higher than Site (III) from 1.37 to 1.78 %. Range of Oil content 50.71 % for variety ICGV -15 -13850 and 40.85 % for ICGV00005. Sapu showed a higher mean of oil content 48.64, 45.78 % respectively. The highest and lowest Free fatty Acid ranging from 0.6, 4.82 respectively both from variety ICGV03181. Again, the same variety ICGV03181 recorded both the highest Acid value mean 7.25 at Sapu and 0.99 at Site (iii) in 2021. Variety ICGV97097 recorded the highest Peroxide value with 5.45 meqO2/kg. The maximum vitamins recorded was 86.58 IU/g with variety ICGV-15-13850. There was no significant difference between the means of specific gravity of the different extracted oil samples which range from 0.90134 to 0.9509 in both years. The findings could be a guide for nutritional, health and breeding purpose. Also to pave for industrial scale of local groundnut oil production thereby reduce oil importation.
