PLANT-BASED BLUEBERRY MUFFINS
It’s blueberry season! Whip up this simple muffin recipe to celebrate in style.

1/2 cup plus 2 tbsp sugar

1 cup soy milk
1/4 cup plus 2 tbsp canola oil 1 tsp vanilla extract
1 tsp apple cider vinegar
2 cups flour
If you’ve been in the clinic recently, chances are good that you’ve already met our patient care coordinator, Maria, who is responsible for getting patients scheduled and checked in for appointments. Here’s your chance to get to know her a little more! Maria joined our team back in February. She graduated from Central Washington University last year with a degree in biology and had been working remotely for a while before she realized that wasn’t a great fit for her. She missed interacting with people face-to-face, which is part of what drew her to her current position. She said she also wanted to work in a field that would allow her to explore different career options. With a background in biology, working at a PT clinic seemed like a great start. Maria says she’s been able to see many aspects of PT Pro already. First as a patient when she had a PT appointment at the clinic, then from the inside while working at the front desk and interacting with patients and therapists. Maria says one of her favorite parts of her job so far is that she gets to see patients progress each week. “I like seeing our patients getting better. It’s nice to see that no matter how they come in, they leave super satisfied.” Since she’s new to the Redmond area, Maria spends a lot of her time outside of work exploring. She especially enjoys trying the different food options in town. “I came from a small town and there weren’t many options for food!” she said. But in Redmond, she’s found a lot of variety and diversity in the offerings. She also travels back home to see her parents and two Chihuahuas, Betsy and Lucy, as much as she can.

2 1/2 tsp baking powder
Zest of 1 lemon
1/4 tsp baking soda
2 cups fresh blueberries
1/2 tsp salt
Directions
1. Preheat oven to 375 F. Grease a muffin tin and set aside. 2. In a bowl, combine soy milk and apple cider vinegar. Set aside. 3. In another bowl, combine flour, baking powder, baking soda, and salt. Set aside. 4. In a third bowl, combine sugar, oil, vanilla extract, and lemon zest. Add milk mixture and stir, then add flour mixture. Stir to combine until well-incorporated but not smooth. Fold in the blueberries. 5. Spoon batter into muffin tin, filling each well 3/4 full. Bake 20–25 minutes, cool, and enjoy!
