CHILLI SHRIMP PILAF

While on vacation, in Peru. I had a dish similar to this. I thought it was authentic and different for a salad.
Ingredients
(3) 16-20 size Shrimp, marinated with chilis 4 oz Ancient Grains Pilaf 4 oz Avocado, diced small 2 oz Lime Vinaigrette
4 oz Mandarin Oranges 1 oz Fresh Mint, chopped 4 oz Cilantro, chopped 1 Lime Zest
1 Lemon Zest Micro Cilantro
Instructions
1.Sauté shrimp until done. 2.Heat grain pilaf. 3.Add avocado, oranges, and mint to pilaf. 4.Plate as pictured. Drizzle with lime vinaigrette, garnish with lemon and lime zest, and micro cilantro.
