AVOCADO CHOCOLATE MOUSSE WITH AQUAFABA FOAM

We have used this recipe for a few groups that have requested for vegan desserts. With the avocado mousse and the aquafaba foam, it is dairy free, gluten free and gives the guests a very rich dessert that is usually not expected. It is a big WOW for the guests and a great surprise when they think they will be getting a fruit cup.

Ingredients

2 Whole Avocado 4 oz Dark Chocolate, melted 4 oz Cocoa Powder 4 oz Agave Nectar Salt .25 oz Vanilla 4 oz Vegan Chick Pea Cream 1.5 oz White Sugar

2 Strawberries 1 oz Blueberry 2 Mint sprigs

Instructions

1.Peel avocado and puree with salt, cocoa powder, and agave until smooth.

2.Melt chocolate with vanilla and add to avocado puree.

3.Whip vegan cream and sugar to soft peaks, then place in the bottom of two dessert

glasses.

4.Pipe mousse in the center of glasses, garnish with berries and mint.
