DESSERT FRY BREAD FROM SIOUX FALLS
Avery Sorenson | Lead Cook | Sioux Falls Sheraton
My roots in Sioux Falls extends beyond the town and the falls, but a rich heritage in Native Sioux culture. One of my favorite dishes has always been a fry bread taco, but as luck would have it, I have a sweet tooth. Using the traditional recipe, I was able to modify it for a popular dessert.
Ingredients
4 cups Flour, All Purpose 2 tbsp Baking Powder .25 tsp Salt, Kosher
1 cup Water, Hot 1 cup Milk, Whole .5 cup Powdered Sugar 1 tbsp Honey 2 Bananas, Sliced 1 cup Strawberries, Fresh Quartered 3 tbsp Sugar, Granulated
Instructions
1.Mix flour, baking powder, salt, and powdered sugar. Add hot water and milk, and mix by
hand until the dough forms.
2.Cover and let it rest for 10 minutes. Make golf-size balls, and then press with a rolling pin or
by hand to a thickness of 6 inches in diameter.
3.Just prior to frying, cut into 2-inch strips.
4.Fry at 350°F until golden brown and poofs, flip, and continue to fry. Place on a paper towel-
lined tray.
5.Meanwhile, in a medium pot, place granulated sugar a tablespoon at a time until melted,
and toss the fruit in.
6.Cook until just incorporated.
