MARGARITA PIE

Julie McIvor | Human Resources Manager | Bowling Green Holiday Inn

Margarita pie has been one of my favorite desserts since long before I'd ever tasted a margarita - and I (not-so) secretly still like it better than the real deal. Originally my mom's recipe, its sweet, unique and refreshing flavor and its fun, vibrant appearance have made it a huge hit and a regular request among my friends and coworkers over the years!

Ingredients

.5 cup Butter 1 cup Pretzels, finely crushed .25 cup Sugar 14 oz Sweetened condensed milk .33 cup Lime juice 3 tbsp Tequila* 2 tbsp Triple sec* 1 cup Whipping Cream, whipped 3 Yellow + Green Food Coloring Drops (optional)

Instructions

1.In a small saucepan, melt butter. Stir in pretzel crumbs and sugar.

2.Press the pretzel mixture onto the bottom and up the sides of a buttered 9" pie plate. Chill.

3.In a large bowl, combine sweetened condensed milk, lime juice, tequila*, triple sec*, and

optional food coloring.

*For a non-alcoholic alternative, substitute 1 tsp of rum extract and 2 tbsp of frozen orange

juice concentrate.

4.Fold in whipped cream. Turn the filling into the prepared pie crust. Freeze or chill until firm.

5.Garnish with lime zest, lime wedges, additional whipped cream (sweetened), and pretzel

crumbs as shown. Serves 8.
