RIO VISTA RIPTIDE

Derick Fickle | F&B Manager | San Marcos Embassy Suites Tubing on the river is a part of the culture in San Marcos. I wanted to fuse this with tiki and hill country vibes. This cocktail starts like a lazy float day with a river of spiced and coconut rum, pineapple and lime, all pulling you in... then flips you straight into the rapids with a flaming bourbon kicker and a cinnamon spark. One sip and you'll be yelling, "Hold my tube!

Ingredients

1.25 oz Sailor Jerry Spiced Rum 1 oz RumHaven Coconut Rum .5 oz Wild Turkey 101 Bourbon 1.25 oz Pineapple Juice 1 oz Lime Juice 1 oz Orgeat Syrup 1 pinch Cinnamon 2 washed Pineapple Leaves Special Tool-Torch

1.In a shaker tin, combine spiced rum, coconut rum, pineapple juice, lime juice, and orgeat. 2.Shake with ice for 15 seconds and "dirty" dump the contents into the glass; no fresh ice needed. 3.Turn the spent lime half inside out and float it on top of the cocktail. 4.Fill the lime half with bourbon and light it on FIRE! 5.Garnish with pineapple leaves and dust with cinnamon for the show. 6.When ready to drink, gently dunk the lime below the surface of the drink, extinguishing the flame and creating a floater effect.
