My absolute favorite cocktail is the paper plane! I wanted to elevate it when working on our fall menu, so I pulled from my heyday as a bartender and remembered the clarification processes I used to do. The milk acts as a filter, removing all the particles and impurities from the alcohol and juices, creating a "clear" cocktail with an exceptionally clean and bright taste!
Ingredients
1 oz Woodford Reserve
1 oz Montenegro
1 oz Aperol
1 oz Lemon Juice
1 Large Rock Ice cube
Instructions
1.Mix all ingredients in a Lexan container.
2.Add 1 oz of heavy cream or milk.
3.Let the mixture sit for 36 hours, then triple strain it through a coffee filter.
4.Pour 4 oz over a large ice rock and garnish with a dehydrated lemon.
