PEACH HONEY TEA
Hana Colvin | Director of Culinary Excellence | Corporate When I was collaborating on a menu for the Lexington Embassy, we were brainstorming drinks to complement the dishes Chef Jonathan had created. With a menu full of Southern comfort, peaches and tea felt like the perfect fit. I actually made this at home recently using farmers market stone fruit and local honey when I was feeling under the weather - it was soothing, fragrant, and just what I needed. It’s wonderful served chilled, but it also makes a cozy warm drink on a quiet evening.
Ingredients
1.5 oz peach purée .75 oz fresh lemon juice .25 oz honey syrup 3 oz iced tea
Peach slice Mint sprig
Instructions
1.Shake peach purée, lemon juice, and honey syrup with ice.
2.Strain into a rocks glass filled with ice.
3.Top with iced tea and stir gently.
4.Garnish with mint sprig
