Our sous chef , Esteban Pe ñ a , was recently distinguished as the winner of the 8th Canary Islands Absolute Regional Pastry Championship – Gran Premio Grupo Harinalia Canarias at # GastroCanarias2025 . In this edition , Esteban captivated the jury with three creations inspired by the ocean depths , conceived as a gastronomic artwork that unites beauty with environmental awareness .
His proposal highlighted the urgent need to protect our oceans from pollution , using marine ingredients such as plankton and seaweed , along with other elements that evoked the richness of the coastal ecosystem . By his side , Nahia Hern á ndez was recognized as Best Assistant , contributing precision , creativity , and meticulous craftsmanship that brought every detail of the presentation to life . This award not only celebrates individual talent but also reinforces Verde Mar ’ s philosophy : creativity , technique , and a deep respect for the origin of every ingredient .
