Full of fresh, bright flavors, this sandwich combines creamy burrata, salty pesto, lemony zucchini, and peppery arugula tucked into a heavenly baguette. FROM OUR TABLE TO YOURS: BURRATA, PESTO, & ZUCCHINI SANDWICH

2 zucchini, sliced Juice of 1 lemon 1/4 cup of olive oil 1 baguette, halved 8 oz burrata cheese

1. In a large bowl, toss the zucchini in olive oil and lemon juice. 2. Preheat the grill or grill pan to high.

3. Rub each half of the bread with olive oil. Grill the bread, cut side down, for 3-5 minutes or until light grill marks appear. At the same time, grill the zucchini until softened, 3-4 minutes per side. 4. Working with the bottom piece of bread, drizzle with a couple spoonfuls of pesto, then layer on the zucchini, burrata, and arugula. Cut into 4-6 sandwiches.
