Baked Salmon With

Homemade Pesto

The Colbys have combined these recipes from Food Network and Saveur to create a family favorite with their own little flair. Try it out and let us know what you think!

Ingredients

4 salmon fillets, 5 ounces each

2 tablespoons fresh lime juice

2 teaspoons olive oil (for the salmon)

2 cups arugula, packed

2 tablespoons olive oil (for the shallot mixture)

1/2 cup finely grated pecorino

1 cup olive oil (for the pesto)

1/2 cup finely grated Parmesan cheese

Salt and freshly ground black pepper

1/3 cup of pine nuts

2 chopped shallots Directions

1 clove of garlic

Bake the salmon about 25 minutes or until cooked through. While salmon is baking, pack the arugula, 1 cup of olive oil, pecorino, Parmesan cheese, nuts, and garlic in a food processor and blend until it’s finely chopped.

Heat the oven to 400 F.

Drizzle salmon with 2 teaspoons of olive oil, and sprinkle with salt and pepper. Stir shallots, 2 tablespoons of olive oil, lemon juice, salt, and pepper in a bowl. Lay each salmon fillet oil side-down on its own sheet of foil, and fold the ends of the foil into a spiral. Spoon the shallot mixture over the salmon, and seal the salmon in the foil. Place the salmon packets on a baking sheet.

Season pesto with salt and pepper.

Using a metal spatula, transfer the cooked salmon onto plates, top it with the pestomixture, and enjoy!
