Speaking of the hurricane season, you still have a short amount of time to get your flood insurance purchased and in place. Please, don’t delay. Take care of it today. Remember the 30-day waiting period, so let’s get moving. You also need to make sure your hurricane plan is ready — especially your food and water. Since so many new people are living in the area who have never had to prepare for a storm, you know lines will be long and supplies limited. Just a quick note that the Rays are still fighting in the MLB East and have so many players on the injured list that you never know who will be on the field most nights. Let’s hope this baseball injury bug goes somewhere else so the team can get healthy for another playoff run this fall. Until next month, –Darren

NOT taking anything away from the team! They played with so many injuries that if this was during the regular season, many of them would NOT have been on the ice. Great job, Lightning! Now, the rebuilding process begins … It will not be long before we see who has left the roster due to salary cap issues. I’m glad I do not have to make those tough decisions. Only time will tell their impact … Another insurance company has bitten the dust. The streak continues with the loss of about one insurance company every 45 days, even with the recent legislative changes. Do I think this is done? NO, but I hope it will ease some as we get ready to enter the busiest part of hurricane season. The industry is truly on the verge of collapse if a big storm hits Florida this year. It would be catastrophic for everyone! The insurance rates on property would skyrocket so high that it would force many people into bankruptcy or foreclosure — something I don’t want to see. We need a very quiet storm season this year to give the legislative reforms time to

TASTY BRUSCHETTA CHICKEN

Ingredients

• 4 boneless and skinless chicken breasts, pounded to even thickness • 4 tbsp olive oil • 2 tbsp lemon juice, divided • 1/4 tsp pepper • 1 tsp Italian seasoning

• 3 tomatoes, chopped • 2 cloves garlic, minced • 1 tbsp fresh basil, chopped • Salt and pepper, to taste • 4 slices mozzarella cheese • Parmesan cheese, grated

Directions 1. Add chicken to a large resealable bag.

2. In a small bowl, combine olive oil, 1 tbsp lemon juice, pepper, and Italian seasoning. Pour over chicken and seal. Refrigerate for 30 minutes. 3. Turn a grill to medium-high heat and add the chicken. Discard the marinade. Grill chicken 5–7 minutes per side or until fully cooked. 4. Combine the remaining lemon juice, chopped tomatoes, minced garlic, and chopped basil. Add salt and pepper, to taste. 5. Before taking the chicken off the grill, top each breast with a slice of mozzarella cheese. Cover and cook 2–3 minutes, then serve topped with the tomato mixture and grated Parmesan cheese.
