Mother’s Day is by far the most celebrated holiday of the year. Honoring love of country or an historic political figure never seems to match up to the attention of Mom. There is a sense of duty on Mother’s Day. From the moment we wake up, until we are ready to turn in, we work hard to make it special. A day to show our appreciation for the person who has the toughest job on earth…balancing family and for most, their careers. What is it about Mom that war- rants such pampering and attention on this day? The answer is clear. She delivers life; the one that carries and nurtures from our birth till her death. A life's journey that has driven her to care for us; to encourage and devote her life's work to us. It's a big job to keep it all tied together. Mom is the iconic anchor with its deeply rooted foundation that keeps family values intact. One of my earliest memories of Mom was her coming to open school day. It was a time when parents had the chance to observe our class, while it

was being conducted. I was eight years old. As my mother entered the classroom, I remember saying to myself, how beautiful she looked! How blessed I was to have such a Mom. I'd say to my buds, "Yup, that's my Mom," as I proudly showed her off. Though my mother worked a full time job, there was always a deliciously prepared home cooked meal on the table every single day. It was important back then, for the family to join at dinner time. Yes, we live in a different world today; It's getting even harder today to be a Mom. I also remember the times when I was unsure of myself. During moments when there was doubt about my ability. She helped me realize and understand that life has it's obstacles. Mom always was reassuring that with a positive attitude, new doors of opportunity would open. For me, it was her belief in me and encouragement that has left an indelible mark on my character. Mom was my best friend. She was my confidant, my support system. The one person above all, that would unselfishly sacrifice her time and love to nurture. The maternal mission of Mom is to keep her family strong. It is why I raise my arm and proudly salute all Moms for their love, devotion and faith in keeping the sanctuary of family alive. The newest trend in fashion is sustainability.

Sustainable fashion embodies con- scious fashion. Clothes that are made eco-friendly, are locally sourced, mind- ful of workers conditions and wages, recycled or upcycled. The best part of the fashion industry is that it is consumer driven. As more consumers buy from companies that are mindful of the way their clothes are produced and sold, more clothing brands will change their production method.

With styles overturning one day to the next, fashion brands thought they had figured out the best way to maintain momentum. Sending manufacturing to developing countries, utilizing their cheap labor and quick construction, while keeping costs down and profits up.

Creating what is now known as “Fast Fashion.”

One of the most popular “Fast Fash- ion” brands today is Shein. Their ability to mass produce clothes at low prices is astounding to most, but a bit dis- tasteful when you realize how. Ac- cording to Business Insider, Shein workers are paid less than 4 cents for every low quality garment they pro- duce. They work 18 hour days and 75 hour weeks. This enables their company to sell trending styles at such low prices. The mass production of clothes has an unethical and serious impact on workers and our environment. Manufacturing factories release C02 and other greenhouse gasses pollut- ing the air we breathe. But the air isn’t the only thing that our clothes are pol- luting. The fashion industry is one of the largest water consumers in the world. It takes about 7,000 liters of water to make a single pair of jeans, polluting fresh waterways with toxic chemicals. Not to mention that most mass pro- duced clothes are made from nylon, spandex and polyester. These very cheap materials are not grown natu- rally, and take almost 200 years to decompose when discarded. As the world is becoming a more en- vironmentally conscious place, the fashion industry is starting to trail be- hind it. Brands like Patagonia and Levis have been making changes to- ward sustainability that consumers are flocking to.

The way consumers purchase clothes can also support the movement.

Thrifting clothes, or swapping an old pair of jeans is a great way to get new pieces while supporting the cause. Doing this eliminates the large amount of clothes that contributes to waste piles. Sabrina Macchio, the founder and de- signer of By Sabrina Jade says, “Pur- chase pieces that you can and will wear again. It’s truly not about the amount of pieces of clothing you own, it’s how you style those pieces.”

Macchio practices what she preaches and is building her brand respectively.

Her main focus is everyday, day-to- night, and seasonless fashion to en- sure her customers get the most out of her high-quality products. The young designer has made sure that she partners with manufacturers that share her same agenda. She says “The must haves are: Ethical working conditions, minimal environmental im- pact, and slow fashion model.” These characteristics separate quality brands from fast fashion brands. As a consumer, pay attention to com- panies that are transparent about their production processes and practice conscious fashion.

HERE IS HOW YOU DO IT: Place butter and water in a medium size saucepan; stir over high heat and bring to a rapid boil. Reduce heat to a low setting. Add flour and salt at once and stir quickly. The flour mixture will come away from the sides of the pan and gather together to form a dough ball. Remove from heat. Crack an egg into a small bowl then stir into the batter; mix fast until fully incorporated. Repeat for remaining eggs. Drop by heaping tablespoons or put dough in a pastry bag and squeeze out mounds of dough onto an ungreased cookie sheet about 2 inches apart. Bake at 350 ° until puffed and golden brown for 35-40 minutes. Remove from the oven and place in a draft-free space until completely cooled. In a medium size bowl, beat cream and pudding with a hand mixer until well combined. Cut off tops of puffs, carefully scoop out any extra inside dough, and fill with pudding mixture. Store in the fridge and enjoy!

As winter in New York was breathing its last chilly breath, we hurried up spring a bit by embarking on Avalon Waterway’s

May is Lyme Disease Awareness Month and while you may be thinking you are usually careful, you might want to think again. In 2021, the CDC shared that “approximately 476,000 Americans are diagnosed and treated for Lyme disease” each year. It seems that the number of ticks carrying the disease increases annually and in 2021, Fox 5 reported that on Long Island and in Connecti- cut, a whopping 56% of ticks carried the disease. This is a health risk for both people and pets. So how can you keep yourself safe from the dreaded tick bite? First, you must arm yourself with knowledge. You’ll find ticks in the grass, as in

your own backyard, and in wooded areas. If you are a gardener, camper, hunter, or just enjoy the outdoors, you are likely to come across ticks. Make sure that when enjoying time outdoors, you wear light-colored cloth- ing, so that you see the ticks more easily. You can also use a repellant on your shoes and clothing, and there are many options available, both chemical and organic. Make sure to brush your clothes off before you enter your home, and take a shower, checking your body for any ticks that may have slipped under your clothes. Treating your outdoor home area is another way to help avoid a tick bite. There are, again, both chemical and organic treatments that you can hire a company to spray or that you can do yourself. The same goes for your pets. You’ll want to treat them with a preventative of some sort, which you can get from your vet or pet store. It’s important to check your pet for ticks daily during peak seasons, the

warmer months, even if they are being treated with a preventative. If you do get bit, don’t panic. Not all ticks carry Lyme disease. You should, however, pull it gently from your skin with a tweezer and save it in a small plastic container or Ziploc bag, and store it in the freezer. You can take the tick to a doctor to get it tested for Lyme straight away, or you can wait to see if you develop symptoms such as the classic Bull’s Eye rash, flu- like symptoms, fever, stiff neck, or headaches. If you develop these symptoms and don’t recall getting bitten by a tick, you can still request Lyme testing from your doctor. As the warmer weather rolls in, don’t worry about being outside. Simply take precautions and make sure to check for ticks on yourself, family members, and pets daily.

by Marc Piperno Since 2005, Blackstone Steakhouse has raised the bar when delivering prime cuts of beef and seafood offerings with the fusion of artful Japanese Sushi. Located in the heart of Melville's business district, Blackstone is a popular draw for hundreds of corporate offices with a strong following of customers that come Island-wide. Sister restaurants include Rare 650- Syosset, Insignia-Smithtown, Opus Steakhouse-Jericho and Bijou of Melville. As its name suggests, a decor of quarry stone, warm woods with contem- porary appointments are all the allure. General manager Dodo Tecusan has been an integral part of the Scotto family of restaurants since 2005. As Mr.Tecusan explained to me,“Our goal is to make every customer feel like they are the most important person on earth.This is our philosophy, and it shows.” Dodo is also very proud to share with me that Blackstone is only one of two restaurants along the entire eastern seaboard that have the right to serve authentic Kobe beef. It is a special certification that Blackstone proudly displays. A diverse menu has been designed to appeal to a wide spectrum of clientele. Signature steaks include the classic Bone-in Ribeye, which is my go-to every time I come to dine; flash-broiled with charred exterior, always comes to a perfect medium rare. Equally popular is the Kurobuta Japanese Pork Chop.A bountiful portion, served with Mitsu apple celery root puree, soy-braised bacon and Asian yam. Seafood favs include the Lime N’ Co- conut Chilean Seabass, prepared in a lime and coconut marinade, then en- crusted in coconut and macadamia nuts which elevate the flavor profile and texture of this firm yet delicate cut. Beautifully presented with purple yam, drops of aji chili and cucumber salad. For me, the sides are what pull everything together. A sumptuous se- lection of roasted brussels sprouts, crispy fried onions, hash brown and lobster mac and cheese... well the list goes on. Don’t stress, order a few for the table.Their sushi and signature rolls keep in step with all that ex- cites its patrons. Prepared by their inhouse Master Sushi Chef, Blackstone will win you over with their original sushi creations that work well for a starter or as a complete dinner. I like to start with one of their signature rolls, like their "Volcano,” made with king crab, pepper tuna, drizzled with a Honey Wasabi Sauce.You have to try the "Blackstone Supreme", prepared with Wagyu Beef, avocado, spicy tuna and king Crab in eel sauce, scallion, tobiko. With my Makers Mark Bourbon, it doesn’t get much better than this. The list of Signature Rolls and Special Rolls goes on. Whatever you try, you are certain to enjoy. CHERRY COFFEE CAKE Nonstick cooking spray 1 can (12.4 ounces) refrigerated cinnamon rolls with icing 1 1/2 cups (21-ounce can) cherry pie filling 1/2 cup slivered almonds or pecans (optional) Heat oven to 375° F. Spray 9-inch round cake pan with nonstick cooking spray. Separate cinnamon roll dough into eight rolls; cut each roll into quarters. Place dough rounded-side down in pan. Spoon pie filling over rolls. Sprinkle almond slivers or pecans over cherry filling, if desired. Bake 25-35 minutes, or until golden brown. Invert onto plate or cutting board.
