Whether you’re starting your day with a cup of coffee or cradling a travel mug on your way to work, it’s hard to imagine a day without it. There’s just something so soothing about sipping on a hot or iced cup of joe, then feeling that caffeine kick in and give you a boost. On Oct. 1, not only is it our son Winton’s 4th birthday, but it is also International Coffee Day! I gained a love for coffee from my grandparents — Jerry Winton Beavers, whom my son is named after, and Bobbye Beavers — and they absolutely loved it. They would sit on their front porch every afternoon, and I mean literally every afternoon, and drink coffee. They lived right down the street from us when we lived in Lubbock and it didn’t matter if the weather was hot or cold; they just loved their afternoon coffee. It was somewhat a ritual in our family, and they would have all kinds of neighbors and friends gather around almost like a little community, and drink coffee together. My grandparents would sleep in separate beds, and every morning from her bed, my grandmother would be desperate for a cup and would yell to my grandfather, “Coooffeeee!” Obviously, he would always get her a fresh cup so she could enjoy it in bed. I’m usually the first one up in the mornings, and now Sheri kind of plays along and does the same thing! She’ll call out for coffee the way my grandmother did, and now Winton even joins in on the fun and calls out for his “chocccc-o-llllate milk.” My dad used to actually make his coffee and would call it “Boston coffee” and it was just a little bit of coffee with a whole lot of milk and sugar. That’s how I first started drinking it, and I got more into it when I went to college. Back in the 1990s, there was a coffee shop called J&B’s Coffee, it was a really cool local place (before coffee was cool), and it’s still there today! STARTING THE DAY WITH A CUP OF JOE HOW A CUP OF COFFEE IS A MOMENT TO SHARE
It was my best friend during my studies. Coffee, of course, helps you get through your day and gives you that energy and fuel to get through your studies, and eventually it just sort of becomes a habit. It’s definitely a habit for me, and I have to drink coffee every day, but I always try to think about the benefits of drinking coffee. I’m no scientist, but I’ve read that coffee gives you the energy to take on the day, and there are additional benefits like supporting your brain and heart health, increasing your longevity, enhancing athletic abilities, and so many others. Last October, actually, we were in Austin and visited a coffee shop called Summer Moon Coffee. They have this special sweet cream that they call Moon Milk. They make their lattes and americanos with Moon Milk lattes, and I just fell in love with it. So now, any time we’re in Austin, we make sure to take a trip there. This is definitely an unpaid endorsement! I just really love their coffee. It became sort of a funny thing because I got a lot of their coffee as Christmas presents from a lot of different people. I googled Summer Moon Coffee in El Paso, and sure enough, someone had opened one up on the east side of town. It’s pretty far, but anytime I’m within 10 miles of it, I always make a stop to grab a coffee.

It’s no trick that children and adults look forward to Halloween night. Some spend their evenings with their little ghouls and goblins, either trick- or-treating or attending fall festivities, and others engage in adult activities, like Halloween parties or costume contests. BE SCARY SAFE
Halloween is all about letting the ghoul times roll, but monsters and ghosts aren’t the only things parents need to worry about this holiday. Most older kids don’t want an adult chaperoning — they want to venture off with their friends to enjoy the night all on their own. Here are a few safety tips so that you and your older kids can enjoy the spooky evening with no worries. Plan a route and curfew. Some older kids still love the nostalgia of trick- or-treating, or maybe they plan to pull some Halloween pranks with their friends. Whatever the reason may be, they may want to enjoy the evening without a parent. One of the best ways to make sure they’re staying safe is to plan a route and a curfew. Pick and choose which routes you feel comfortable with them going on, either somewhere nearby or somewhere in the neighborhood. And choosing a curfew time is essential so you know when to expect their return. This way if something happens and you cannot reach them or they aren’t back in time, you have a general idea of where they can be on the route. Pack the essentials. Always make sure your child has their phone on them in case of an emergency, no matter if it’s to call you or an emergency line. You could even share locations so that you’re able to track where they are or use another location tracking app like Life360 or FamiSafe that’s available on your devices. If they plan to stay out for a while, have your child take water bottles, flashlights, and even a small first- aid kit with them. They actually come in handy when exploring the Halloween night and the unexpected happens. Older kids deserve a bit of freedom, as long as they can do it responsibly. Consider these tips to make sure the night is trick-free and full of the best treats.
Either way, the “fright night” element is all part of the fun, but unfortunately, accidents and injuries are a common risk to both drivers and pedestrians, especially on Halloween night. Luckily, we have compiled a list of safety tips for everyone to ensure a fun, safe, spooky night! Obey the rules of the road. As a general rule of thumb, you should never look at your phone while driving and always make complete stops at all traffic signals and stop signs. In residential areas with large numbers of pedestrians, drivers should proceed with extra caution and avoid driving recklessly.
Pedestrians — though should always be paying attention as well — tend to wander on the streets or dart between parked cars or bushes, and with dark costumes, they can be easily overlooked. So, always stay alert and anticipate that there will be pedestrians walking around every corner.

Don’t drink and drive. Did you know that between 2015–2019, 41% of casualties on Halloween night were caused by impaired driving?
Halloween is a great time to throw costume parties and gather with your friends to enjoy a night of spooky festivities. But, if you plan to drink, assign someone to be a designated driver or call a ride-share service. Take extra precautions with children. It’s no surprise that children would want to go trick-or- treating by themselves or with friends, but they are also the most at risk for pedestrian accidents. Communicate and make sure your child understands and is aware of all traffic safety rules. You can even take it a step further and use reflective gear/tape on their costumes or have them carry a flashlight to make them more visible to oncoming drivers.
Examples of potential hazards include the following:
• Wet surfaces • Uneven walkways • Overgrown bushes, trees, and roots • Ponds, streams, and other bodies of water that can become concealed • Unsecured electrical cords When a property owner is aware of a potential hazard and fails to make adjustments or warning signs, an individual can injure themselves and could be entitled to a premises liability claim for compensation to cover their losses. Prepare your sidewalks or other walkways. Depending on the location of your property, the sidewalks may not be your responsibility. But, if they are your responsibility, always be sure to clear out any debris so the walkway is visible. If it is uneven, it’s essential to either repair it or warn guests with a sign clear and big enough for everyone to see.

INGREDIENTS
Prepare your doorstep or porch. Many people decorate their porches with carved pumpkins, candles, and other fall essentials that may not be easily seen from far away. You may even want to grab a holiday drink and hand out candy this year, and with that comes potential spills or messes. If there is a spill from a drink, pumpkin guts that have leaked out, or hot wax that has melted from a candle, give your guests a heads up if you can’t clean it immediately. If your home has stairs leading to the door, consider sitting at the bottom so trick-or-treaters can avoid any slips and falls. Hopefully, your property will be prepared for everyone that visits your home to ensure a fun and safe Halloween night! However, others might not be as careful. 16 oz orecchiette
3 tbsp butter 2 cloves garlic

1–2 tsp fresh minced thyme
Olive oil
3 tbsp flour
Salt, to taste
2–3 cups chicken broth 1/4 cup Parmesan cheese
Ground black pepper, to taste
Pumpkin seeds
Lemon juice, to taste
Salt, to taste
DIRECTIONS
1. Cook orecchiette according to package directions. 2. On two baking sheets, place veggies. Drizzle with olive oil, salt, and pepper, and roast at 400 F for 20–30 minutes until tender. 3. In a pan, melt butter over medium heat. Add garlic and thyme, then sauté until soft. Add flour and whisk until smooth. Pour in the chicken broth 1/2 cup at a time, whisking to incorporate. Finish with Parmesan cheese, lemon juice, and salt. 4. Toss everything together. Top generously with pumpkin seeds and Parmesan cheese.

Zombie Paintball We’ve all watched a scary movie and thought we could do better than some of the characters in these extreme situations. Now is your chance to prove it. There are zombie paintball courses throughout the country, and they can be a great time for everyone involved. You’ll step aboard a bus or trailer outfitted with paintball guns and proceed along a course full of zombies and creatures. Before long, your friends and family will get into the competitive spirit to see who can hit the most targets.
