Chef‘s Kitchen

Apple-Onion-Bacon Jam

• 12oz applewood smoked bacon , small dice • 2 tbsp butter, unsalted • 2 large yellow onions , small julienne • 1 small gala apple, small dice • ¼ cup brown sugar • 2 tbsp apple cider vinegar • 2 tbsp fresh thyme • cayenne pepper, to taste

• ¼ cup apple juice • olive oil, drizzle • salt and black pepper, to taste

Instructions 1. Place bacon in a large, heavy-bottomed pot and cook over medium heat until bacon is just about crispy. 2. Pour bacon and rendered fat through a strainer and reserve. 3. Return pot to medium heat; drizzle ¼ of the reserved bacon fat and butter in pan. 4. Sauté onions until soft and translucent. Once translucent add diced apples. 5. Stir in brown sugar, vinegar, thyme leaves, black pepper, and cayenne into onion mixture; add bacon. 6. Stir apple juice into bacon mixture and cook until jam has a brown, bacon color and a jammy consistency, 10 to 15 minutes. 7. Remove from heat add olive oil, stir until warm then fish out thyme stick and let cool. Season with salt and black pepper.

The Seven Oaks Book Club

The Seven Oaks Book Club meets each month to discuss books on a reading list which is created by mutual consent of the Book Club members. All members of SOCC are invited to attend. Our selection for August is... Broken Country by Clare Leslie Hall

Here's How to Do It: • Ball Position: Slightly back in your stance • Weight: Favor your front foot (about 70%) • Hands: Keep them ahead of the ball • Motion: Use a putting-style stroke - minimal wrist hinge, quiet hands By limiting variables, you’ll start to groove a repeatable motion and get more up-and-downs. Try It This Week: Spend 10 minutes before your round using just one club for all chips. Learn how the ball reacts with different swing lengths and lies.

Good Luck Landon! In two weeks, our summer intern, Landon Simpson, is finishing his internship with Seven Oaks and has spent the summer getting to know the members. We’ve appreciated the work and help he’s put in around the shop and out on the course, and wish him all the best! Landon will be attending UNLV in the fall for his sophomore year in the PGM program and will continue his education to become a PGA member.
