Disclaimer acknowledgement from guest must be required and records should be kept for a minimum of 6 months.
IN-HOUSE CATERING EVENT and ALL-DAY-DINING BUFFET (ALL MEAL PERIODS) must have food samples retained of each of the following items in the menu: ( 150 grams each )
▪ RTE items from cold kitchen (e.g. raw oyster, seafood sashimi, cold seafood, sushi etc.) ▪ All high-risk dairy and egg-based items that are served cold
HIGH-PROFILE EVENT, e.g. government-related media, VIP, school event, etc. must have food samples include ice cubes (holding food samples) retained of each item (150 grams each)
