Policy 55 – ADD, In-House & Outside Catering (Category 3) (Cont'd)

OUTSIDE CATERING INSPECTION PROCESS ➢ Outside Catering site must be inspected by the Banquet Chef, Banquet Service Manager, Engineer, Stewarding, Event Manager and Hygiene Manager.

➢ An Emergency Response Team (ERT) member should be involved too if the event invites more than 500 guests.

➢ An Outside Catering Site Inspection Checklist should be used to assess feasibility before signing of any service contract with client.

➢ A 100% full compliance on the checklist items are required. For any incompliance, corrective action(s) must be implemented and validated by Hygiene Manager prior to the event date. ➢ Only provide catering service at approved site that has adequate facilities to ensure food preparation can be done in a hygienic and safe environment.
