Responsibilities
Hotels should always trade legally and safely. Local regulations and legislation must be complied as a minimum (where the local legislation has tighter requirements than the SL policy, the more stringent requirement must be complied).
Procurement team will work with the Hygiene Manager and Hotel Chef to establish a list for small stalls.
These suppliers should be audited by TPA. However, Hygiene Manager and Hotel Chef could participate in small stall audit whenever supplier is not able to be audited by TPA.
Procurement team should ensure supplier audit reports are retrievable.
*Audit for small stalls and suppliers should follow the same audit frequency as a minimum requirement.
