I don’t know if I am happy about mowing grass or not. Once you mowing it seems like an ongoing project until winter but it also means warm weather and sunshine. The sunshine could be more prevalent as it seems like lately it rains 5 of the 7 days of the week. But with warm weather means I get to see more creatures. For example, there was this salamander who was nonchalantly walking through the freshly mowed grass. I do not see many of these so I thought this one was around due to all the wet weather and time to lay eggs. Maybe he/she just wanted to get out and about from being cooped up due to Covid-19.

INGREDIENTS •3 cups baby spinach or super greens blend •1 clove whole peeled garlic •2 tbsp fresh ginger, sliced •1/4 tsp cayenne pepper •1/4 tsp ground turmeric •1/4 tsp wasabi powder (optional) •1 cup chicken or vegetable

broth •1/2 cup coconut milk •Salt & pepper to taste •Squeeze of fresh lemon or lime juice For garnish: •broccoli florets, lightly steamed •1/4 cup Greek yogurt, thinned with milk •Chia seeds

DIRECTIONS Mix all ingredients (except those for the garnish) together using a high speed blender. Heat over stovetop until steaming hot. To serve, pour into a bowl and garnish with broccoli florets, a swirl of yogurt, and chia seeds.
