Ladies Spring Tea Raises Support for Women in Need

Our First Annual Ladies Spring Tea was a beautiful gathering filled with purpose, compassion, and community. This year, our incredible Seven Oaks ladies chose to support the Bakersfield Women’s Center, an organization dedicated to combating human trafficking and providing aid to survivors. Thanks to the generosity of our members and guests, we raised nearly $4,000 in donations. In addition to financial contributions, personalized comfort items were donated for comfort bags - a small but meaningful gesture to bring comfort and dignity to women in crisis. Each year, our ladies come together to host an event that gives back, and we are so grateful for the continued spirit of giving that defines our community. Thank you to everyone who participated and made this event a heartfelt success!

JULY 2025 Chef‘s Kitchen

Grilled Shrimp & Asian Pear Salad with Honey Sesame Vinaigrette (Serves 4)

Ingredients: • 16 ea. Tiger Shrimp, U-15, Peeled & Deveined • 1 hd. Baby Romaine, Washed, Rough Chop • 1 hd. Frisse, Washed, Rough Chop • 1 hd. Lola Rosa, Washed, Rough Chop • 1 hd. Kale, Washed, Rough Chop • 1/8 hd. Cabbage, Purple & Green, Washed, Julienne (Thinly Sliced, Straw-like Cuts) • 1 ea. Carrots, Washed, Peeled, Julienne (Thinly Sliced, Straw-like Cuts) • 24 ea. Snap Peas, Washed, Julienne (Thinly Sliced, Straw-like Cuts) • ½ ea. Cucumber, Peel, Cut into Slices (Circles) • 3 ea. Navel Orange, Peeled, Cut into Slices (Circles) • 3 ea. TBSP. Pepitas, Pumpkin Seeds, Toasted in Oven, Season with Salt & Pepper • 3 ea. TSP. Sunflower Seeds, Toasted in Oven, Season with Salt & Pepper • 3 TBSP. Craisins, Soak in Water to soften, Add to Salad • 12 ea. Cilantro Leaves, Washed, Pat Dry, Julienne (Thinly Sliced, Straw-like Cuts) • 4 ea. Basil Leaves, Washed, Pat Dry, Julienne (Thinly Sliced, Straw-like Cuts) • 4 ea. Mint Leaves, Washed, Pat Dry, Julienne (Thinly Sliced, Straw-like Cuts) • 1 TBSP. Olive Oil, Lightly Coat Shrimp Before Grilling • Salt & Pepper, To Taste • 1 ea. Asian Pears, Wash, Julienne (Thinly Sliced, Straw-like Cuts) • 4 ea. Purple Orchid

Honey Sesame Vinaigrette {1 Quart}

Ingredients: • 4 tsp. Orange Zest

• 4 ea. Large Oranges, Juice • 4 tsp. Ginger, Finely Grated • 4 tsp. Garlic, Minced • 8 tbsp. Rice Wine Vinegar • 4 tsp. Honey

1. Place all ingredients in a mixing bowl except for the oils, water and salt and pepper. 2. Slowly mix ingredients at low speed or medium speed. While mixing, drizzle all oils slowly in a steady stream. 3. If mixture gets a little too thick just add some of the water in order to get the desired viscosity. 4. After fully mixed add sea salt and freshly ground pepper to desired taste.

• ¾ cup Vegetable Oil • ¼ cup Grapeseed Oil • 2 tbsp Sesame Oil • ¼ cup Water • 1 tbsp. Light Soy Sauce • To Taste - Sea Salt & Freshly Ground Pepper

Directions: 1. Follow instructions below and proceed to make the Honey Sesame Vinaigrette. This step can be made a few hours before and then chilled. Feel free to make a day ahead or even a week ahead. You can’t go wrong, this dressing is a fabulous edition to any refrigerator and can be used for several different salads, coleslaws or chilled pasta. 2. Peel shrimp and devein shrimp with a small pairing knife. Rinse with water to clean vein and set aside later for grilling. Add shrimp to stainless steel bowl with a small amount of olive oil and reserve until ready to grill. Preheat grill. 3. Wash and cut all other ingredients accordingly.

4. Mix all lettuce and herbs into another stainless steel bowl, and set aside. Keep covered in the refrigerator until ready to mix. 5. Once grill is hot enough, season shrimp with salt and pepper and lightly grill shrimp until cooked all the way through. Approximately 2-3 minutes on the first side and 2 minutes on the other side. When fully cooked, pull off the grill and set aside. 6. Add salad dressing to lettuce and herb mixture, lightly toss with salt and pepper. Once mixed properly, and the dressing is clinging to the lettuce mixture, then please set in your favorite bowl or salad plate. 7. Add Asian Pear slivers to the top of the salad as a garnish. This adds a delicate sweetness to the dish and pairs well with the array of lettuce, cabbage and vegetables to give it that perfect crunch full of vitamins and nutrients. 8. Add 4 grilled shrimp to the top of each salad plate. Nestle the shrimp next to the Asian Pear slivers. 9. Place an orchid on each salad plate as a garnish. If you would like to jazz it up a bit further, try frying some wonton wedges and adding them to your salad. If you would rather bake them, that is fine too, and this would also be a healthier alternative. Enjoy !!!

The Seven Oaks Book Club

The Seven Oaks Book Club meets each month to discuss books on a reading list which is created by mutual consent of the Book Club members. All members of SOCC are invited to attend. Our selection for July is... The Day the World Came to Town by Jim DeFede

When 38 jetliners bound for the United States were forced to land at Gander International Airport in Canada by the closing of U.S. airspace on September 11, the population of this small town on Newfoundland Island swelled from 10,300 to nearly 17,000. The citizens of Gander met the stranded passengers with an overwhelming display of friendship and goodwill. As the passengers stepped from the airplanes, exhausted, hungry and distraught after being held on board for nearly 24 hours while security checked all of the baggage, they were greeted with a feast prepared by the townspeople. Local bus drivers who had been on strike came off the picket lines to transport the passengers to the various shelters set up in local schools and churches. Linens and toiletries were bought and donated. A middle school provided showers, as well as access to computers, email, and televisions, allowing the passengers to stay in touch with family and follow the news.

Over the course of those four days, many of the passengers developed friendships with Gander residents that they expect to last a lifetime. As a show of thanks, scholarship funds for the children of Gander have been formed and donations have been made to provide new computers for the schools. This book recounts the inspiring story of the residents of Gander, Canada, whose acts of kindness have touched the lives of thousands of people and been an example of humanity and goodwill. Members will need the Verkada Pass app downloaded on their mobile device to unlock the pool gates and the gym door. We are still working out the 'kinks' at the Tennis Pavilion and we will let you know when it is working correctly.

ACE OF THE MONTH:

PAM REYNIER

Ladies’ Team Play wins Silver Medal!!! Congratulations to a group of outstanding women who made history representing Seven Oaks in this year’s 2025 Team Play Season! It was a first for the Seven Oaks ladies to win their Net Group division and head into the playoffs. It began with a victory over Valencia Country Club in the Quarterfinals and continued by defeating Mission Country Club in the Semifinals.

These wins placed the team into the Championship Finals which was held at Sandpiper Golf Club in Santa Barbara on June 1st. There, the team placed 2nd against California Country Club and our players received silver medals. For many this was a once in a lifetime experience that they will never forget, an event filled with excitement and pride. The 2025 team has had tremendous growth in the quality of their game, the size of the team, and the dedication to their playing partners. Thank you to the Seven Oaks Club and all the members for their support and encouragement as the season progressed and thank you for continuing to celebrate this huge victory with us! ~ Sheri Williams, Ladies’ Team Play Captain
