Chicken slow cooked in mole, then shredded in the sauce and served in a burrito with beans and red rice, pickled red onion, shredded cheese and cilantro. CHEESE AND AVOCADO WITH GUAJILLO TOMATO DIP The cheesy, creamy, dippable dish of dreams. Mexican cheese blend is melted between a flour tortilla, folded over scoops of chunky avocado and served with a side of roasted tomato guajillo broth. STUFF-AND-DIP QUESADILLAS Packed to the brim with flavor. Using a large flour tortilla, shredded Mexican cheese is put on half and folded over. It’s then filled with your choice of protein and other ingredients and folded over again. Serve with a dip to complement. CHICKEN TORTA Create a marinade with ancho and pasilla peppers that will turn a simple chicken breast into a flavor adventure. Top with chunky avocado. MOLE PRIME RIB TORTA Start with leftover prime rib, smother with mole sauce and serve atop refried black beans in a Telera roll. Add avocado, queso fresco and pickled red onion for a little extra yum.
