CLASSIC SAUCES + PEPPER PASTE ESPAGNOLE (BROWN SAUCE) Add your choice of pepper paste to your brown sauce as a secret ingredient in braises or slow cooked meats. This is a great addition to a demi-glace for a smoky steak sauce or create an ancho and pasilla brown gravy for poutine. HOLLANDAISE Add pepper pastes to your hollandaise for signature spicy benedicts or as a nice sauce to top steak and crabmeat in a variation on Beef Oscar. BECHAMEL This white sauce is a classic base for many sauces. Add pepper paste and have a spicy start for any cheese sauce or add sausage for a twist on country gravy. VELOUTÉ Kick this base sauce up a notch by adding a pepper paste. This works great as a turkey gravy or as a chicken pot pie or empanada filling. TOMATO A necessary sauce in every operation. Spice up your tomato sauce with pepper pastes to make the perfect spicy pasta sauce, pizza sauce, sauce for a piece of grilled fish or enchiladas. GUAJILLO HONEY AND GARLIC The perfect mix of sweet and spicy. Mix guajillo pepper paste into a honey garlic sauce for a sweet heat.

MEXICAN SAUCES + PEPPER PASTES SALSA AND TABLE SAUCES

Many salsa and table sauces use dried chiles. A classic roasted salsa roja is made by adding chipotle, ancho and guajillo pepper pastes to roasted garlic, tomato and onions. Then puree. To make unique tomatillo chipotle sauce, add chipotle pepper paste to roasted tomatillos, onion and garlic. ADOBO A basic marinade of dried chiles, spices and vinegar is a staple in Mexican cooking. Traditionally made with a mix of ancho and guajillo and a small amount of chipotle to balance the sweetness of the ancho – it’s a perfect marinade for pork and chicken. CHIPOTLE GARLIC SAUCE This classic sauce is good on almost anything. Squeeze some chipotle pepper paste into golden garlic sauce for some extra smoke and heat. ANCHO PASILLA PEPPER PARMESAN SAUCE For a spicy, cheesy, umami flavor, try adding a touch of ancho & pasilla pepper paste to a parmesan peppercorn sauce. CHIPOTLE ENCHILADA SAUCE Mix a #10 can of red enchilada sauce and 1/3 c. of chipotle pepper paste.
