Sweet Potato Pudding

Serves 6 Ingredients 800 g sweet potatoes ½ tsp. grated nutmeg 2 cups brown sugar

Heading

1 tbs. freshly grated ginger

3 cups coconut milk 2 tsp. vanilla extract

400 g flour 1 cup raisins

1 tsp. cinnamon

1 tsp. salt

Method 1 Heat the oven to 350 degrees Fahrenheit. 2 Peel the potatoes carefully. Grate them finely and put them into a large bowl.
