We are always looking for new ways to better our attorney referral program, create teachable moments, and find how best to collaborate as professionals in delivering the VERY best service for the client. Recently, a referral attorney sent us a case he thought would be a better fit for our firm. After all, he is not a civil or personal injury attorney. Of course, we gladly met with the client and took on the case — we want to help as many people as possible. Well, we decided to try something new. Because this attorney is not experienced in civil or personal injury law, we had him sit in on the mediation case. He saw just how cathartic the process is for the client and how having a positive relationship with mediators helps the case. He learned a lot about this branch of law. He was extremely grateful for this opportunity and reported seeing the process firsthand was beneficial. The experience opened his eyes to how much we care about our clients, the lengths we go to get them the compensation they deserve, and how the process works. Now, in the future, this attorney is better equipped to know what to look for in deciding which cases to send our way and whether or not we will be able to step in and help. • 8 oz bucatini pasta • 4 oz sun-dried tomatoes, packaged in oil • 10 oz cherry tomatoes, halved • Salt and pepper • Red pepper flakes, to taste • 1 tsp dried oregano • 8 oz frozen spinach, unthawed • 2 cloves garlic, diced • 1 tsp fresh thyme • 3 sage leaves, chopped • 4 oz hummus • 4 oz pumpkin purée • Fresh basil, for topping Ingredients If it has pumpkin in it, it’s bound to be delicious. This creamy pumpkin bucatini is the perfect fall staple for an at-home date night or a cozy meal alone on the couch.
Directions
1. In a large pot, boil water. Add bucatini pasta and cook according to package instructions. Drain when cooked. 2. Heat a pan over medium heat and add sun-dried tomatoes (including 1 tbsp of the oil), cherry tomatoes, a pinch of salt and pepper, red pepper flakes, and oregano. Stir to combine. 3. Cover and cook until tomatoes are soft (about 5 minutes). 4. Add frozen spinach and cover again (2–3 minutes). 5. Add the garlic, thyme, sage, hummus, and pumpkin purée to the pan and stir. 6. Once warm and bubbly, turn off heat and mix in the pasta. 7. Top with basil, serve, and enjoy!
