Both Matt and Francesca have worked at some of Madison’s best restaurants including, Restaurant Muramoto and 43 North, which happen to be owned by their mentor, Shinji Muramoto. While working as a sous chef at one of Muramoto’s restaurants, Morris got the opportunity to study in Japan, focusing on Japanese cuisine. He brought this knowledge and new techniques he learned in Japan back to Madison, WI which transformed them into their own local restaurant. Unlike other ramen shops in the area, Morris Ramen focuses on three or four ramen bowls, each built on a rich broth with well integrated fat, which gives it a depth like no other. Even though ramen is built on a meat based broth, Morris offers a vegetarian option which offers the same rich full bodied depth, but without the use of meat.
