3 cups brown sugar 1 1/2 cups Dijon mustard 1/4 cup and 2 tbsp kosher salt 2 tbsp cayenne pepper

2 gallons of cold water 1 bunch of thyme
1 head of garlic, crushed 12-pound turkey 2 1/2 gallons vegetable oil

DIRECTIONS 1.
In a large pot, whisk brown sugar, mustard, salt, and cayenne pepper. Gradually whisk in cold water, then add thyme and garlic. 2. Add turkey, then cover and brine in the refrigerator for 36 hours. 3. In a turkey fryer or 18-quart or larger stockpot, bring vegetable oil to 400 F. Remove turkey from brine and pat it dry with paper towels. 4. Transfer turkey to frying basket with the breasts facing up. Lower turkey into hot oil and cook for 3 minutes per pound. Remove and drain turkey over a rack and baking sheet for 15 minutes.
