One-Pan Baked Salmon and Veggies Inspired by BBCGoodFood.com

It’s asparagus season! Celebrate with this easy one-pan salmon dish for two.

Ingredients

1 lb spring potatoes, halved 2 tbsp olive oil (divided) 8 asparagus spears, trimmed and halved

• • • •

2 handfuls cherry tomatoes 1 tbsp balsamic vinegar

2 5-oz salmon fillets 1 handful fresh basil

Directions

1. Preheat the oven to 400 F. 2. In an oven-proof dish, combine the potatoes and 1 tbsp olive oil. Roast for 20 minutes. 3. Remove the dish from the oven and add the asparagus. Toss, and bake for 15 more minutes. 4. Remove the dish from the oven and add the cherry tomatoes. Toss. Drizzle with balsamic, then nestle the salmon fillets into the vegetables. Drizzle with the remaining oil, and bake for 10–15 minutes. 5. Remove the dish from the oven, garnish with basil leaves, and serve!

Evan grew up in Redlands, California, and attended Redlands High School before heading to the University of California, Riverside, where he earned a bachelor’s degree in economics. He grew up in a family that wanted nothing more than to help others. His mother was a teacher, his father was a deputy district attorney in San Bernardino, and his younger sister is a special education teacher in Northern California. Evan knew he wanted to follow in the family’s footsteps and pursue a career where he could help others. After graduating from UC Riverside, Evan and his then-fiancée (now wife) wanted to do something new and decided to move to Chicago, where he attended the Loyola University Chicago School of Law. He earned his Juris Doctor and returned to Southern California after graduating. He took a job at an estate planning firm and quickly fell in love with the industry. For the past 10 years, Evan has dedicated himself to helping others with their estate plans. He enjoys meeting with clients, figuring out what their apparent and hidden concerns are, and helping them so they can leave the meeting with a weight lifted off their shoulders. He knows every client’s needs and concerns are unique and makes an effort to reflect these needs in their estate plans. People worry about their future and if their wishes will be carried out — Evan always strives to provide them with peace of mind. Evan is a certified specialist in estate planning, probate, and trust administration. When he’s not helping people at work, you can usually find him spending time with his wife and two sons. They love to hike, golf, and catch the occasional Dodger game. Next time you’re in the office, make sure you say hi to Evan!
