A Symphony of Spice and Freshness Chef Xu’s Signature Raw Green Mango Salad

Ingredients (Serves 2):

To Prepare: 1. Using a zigzag peeler or julienne slicer, shred the peeled green mango into thin strips—avoiding the grater to preserve crunch. 2. In a mortar or small blender, grind the chillies (seeds removed for less heat), ginger, honey, soy sauce and fresh herbs into a smooth paste. Add a touch of water if needed. 3. In a mixing bowl, gently combine the mango, shallots, peanuts and dressing. 4. Toss lightly, season with salt and serve immediately for the freshest bite. Fresh, fiery and full of contrast—this Raw Mango Salad is a celebration of summer in every spoonful.

• 1 medium-sized unripe green mango (peeled) • 4 shallots (thinly sliced) • 3 tbsp roasted peanuts (crushed) • 2 red bird’s eye chillies • ½ inch fresh ginger • 1 tbsp honey (or maple syrup) • 1 tsp soy sauce • Fresh coriander leaves or chopped kaffir lime leaves • Salt to taste • Optional: a splash of water to adjust dressing consistency

At 55 years old, Suganthi Ramesh is rewriting the narrative of what’s possible. Not just with her body, but with her heart and mind. Deeply rooted in South Indian culture, she once placed her family’s needs above her own. With two accomplished daughters who are doctors, her life had been about giving, until a health scare changed everything. With blood sugar levels spiking above 250 and consistently high blood pressure, she decided it was time to take charge. A year and a half ago, she joined the Shangri-La Bengaluru’s Health Club , and from that moment, everything began to shift. Guided by Dr. Jazzy’s naturopathy insights and the dedication of her personal trainer Eshwar R , she began her transformation which was not just in weight, but in mindset.
