To Prepare: 1. Using a zigzag peeler or julienne slicer, shred the peeled green mango into thin strips—avoiding the grater to preserve crunch. 2. In a mortar or small blender, grind the chillies (seeds removed for less heat), ginger, honey, soy sauce and fresh herbs into a smooth paste. Add a touch of water if needed. 3. In a mixing bowl, gently combine the mango, shallots, peanuts and dressing. 4. Toss lightly, season with salt and serve immediately for the freshest bite.
