EASY IRISH FRIED CABBAGE AND BACON
INGREDIENTS •
6 ounces thick bacon + drippings

½ small onion, diced
½ head green cabbage, shredded
1 tbsp light brown sugar
¼ tsp salt
¼ tsp black pepper
Caitie’s optional add-in: diced kielbasa or andouille chicken sausage, flavor of choice

Use a slotted spatula to remove the bacon pieces and transfer to a paper towel-lined plate. Discard excess drippings, leaving the pan greased from the bacon. Add diced onion to pan and cook until translucent, about 1-2 minutes. Add shredded cabbage to pan and toss to coat. Add in sugar, salt, and pepper and cook until cabbage is tender, about 5-7 minutes. Add bacon back to cabbage and cook another 2-3 minutes. Serve hot and season with additional salt and pepper if desired. Notes: brown sugar can be left out if desired. Optional add-ins include: roasted or steamed vegetables of choice, desired meat, or even toasted nuts or dried fruit.
