Hot Buttered Apples by Jessica Robertson Here is a seasonal recipe that is really good for boosting your immune system. If you can find foraged apples, that’s fantastic! Sometimes people with an apple tree on their property have more than they can manage so they are happy to share. They don’t always look as perfect as the ones from commercial growers but they are great for cooking with! 12 tart apples 1 cinnamon stick 1 tbsp cinnamon 8 whole cloves (or ~3/4 tsp ground) 1 tbsp turmeric powder 1 inch piece of fresh ginger root (or 1 1/4 tsp ground) Peel, core, and roughly chop apples. Place the apples in a pot with 2 cm of water at the base. Add the spices and dates. Bring to a boil, stir, and then lower the heat. Add butter and stir again. Cover pot and simmer on low heat for 10 minutes, stirring once. 1 tbsp butter 4 pitted dates
Arias and Ale – Opera Pub at Storm Stayed Brewery by J. Bruce Parker
As daylight dims much earlier this time of year and late autumn reveals a cold shoulder, we tend to retreat to indoor activities. Storm Stayed Brewery has been very accommodating with this notion with the 10th edition of ‘Opera Pub’, an ongoing event at their venue since 2018. Stephanie O’Leary and Paul Digout have been hosts throughout, gathering young vocal professionals to regale the very appreciative bar patrons with the arias of the grand operatic catalogue. The evening of November 12th was no different with excerpts from works by Mozart, Handel, Barber, Verdi, and Saint Saens. London’s craft breweries have tapped into their own social network for a variety of entertainment. There are pubs focusing on trivia nights, book clubs, local musicians, and a diversity of themed nights, but Storm Stayed Brewery has offered the music and beauty of opera to those who may have avoided or not yet experienced it. Co-owner of Storm Stayed, Justin Belanger tells me, “It’s not the regular venue for that kind of music. We want to be open and welcoming to a different demographic and certainly to those who love this music.” All the singers perform at a professional level, some still finishing their Masters or Doctorate in music and all in amazing voices. It is a free event and as Stephanie explains, “We are not paid. We do this to spread opera and its wonderful music through the community. Outside the University of Western Ontario, there are not many outlets for this music. It is an effort to make it accessible and fun”. And it is. No stage sets or plot lines to follow, and the casually- dressed singers ply their voices as beer is tapped and served. It is a comfortable and casual environment. Opera Pub will return to Storm Stayed Brewery early next year.
