WHO INSPIRES US AND WHY Hillary, Attorney : Even though they are no longer with us, I continue to be inspired by my grandma Gertrude and great-aunt Sylvia. They immigrated from Poland to the United States when they were 8 and 6. Hannah, Litigation Assistant: The biggest inspiration in my teenage years was my social studies teacher. He was also the teacher for my psychology, sociology, and AP history courses, as well as head of an impromptu book club where he introduced me to classics such as Orwell’s “1984” and Huxley’s “Brave New World.” He always pushed us to broaden our horizons, and my favorite assignment from him involved visiting a Buddhist temple for the first time. He greatly influenced my decision to pursue a BA in sociology, and I will forever credit him for sparking my sociological imagination. Stephanie, Case Manager : My mother is my unwavering source of inspiration and guiding light in my life. Her commitment to service within the church demonstrates her unwavering compassion. Always putting others before herself, she possesses an extraordinary willingness to go to great lengths for anyone in need. Her acts of kindness extend beyond words, as she sacrifices her time, energy, and even personal funds to make a positive impact on the lives of those around her. Watching her selfless dedication has instilled in me a profound sense of empathy and a deep-rooted belief in the power of giving. Coach inspired me to stand up for what I believe, spread kindness, and not take life too seriously.

Panko-Crusted Salmon

DIRECTIONS

1. Preheat the oven to 425 F. 2. In a small bowl, mix together the panko, parsley, lemon zest, 1/2 tsp salt, and 1/2 tsp pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside. 3. Place the salmon fillets, skin side down, on a cutting board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere. 4. In a 12-inch cast-iron skillet or large ovenproof pan, heat the vegetable oil over medium-high heat. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3–4 minutes, without turning, to brown the skin. 5. Transfer the pan to the hot oven and bake for 5–7 minutes until the salmon is almost cooked through and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5–10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

After the indulgence of the holiday season, it’s time for some healthy eating. This simple recipe is satisfying and delicious but also low-calorie. Serve with oven-roasted potatoes and steamed broccoli. INGREDIENTS • 2/3 cup panko (Japanese dried breadcrumbs) • 2 tbsp minced fresh parsley

• 2 tbsp good olive oil • 4 (6–8 oz) salmon fillets, skin on • 2 tbsp Dijon mustard

• 1 tsp grated lemon zest • Kosher salt and freshly ground black pepper

• 2 tbsp vegetable oil • Lemon wedges, for serving
