Dedication This cookbook is dedicated to our founding members, whose vision
for CCHGA in 1994 was to instill a sense of pride in the history and heritage of Cheatham County, and to work toward the establishment of a County Museum. Founding CCHGA members were Thelma Heflin, Jim Allen, Mary Grey Jenkins and Betty Cannon. Founding members of the PALS (Pond Creek and Lillamay/Sam’s Creek) Chapter of CCHGA were Jim Allen, June Crouch Nixon, Earl Nixon, Judy Vick Mayo, Maria Garland, Bo Jordan, Brenda Whitaker, and Gerald Curtis. It is with deepest appreciation that we honor these individuals for their foresight and diligent efforts to enhance the county by creating the Cheatham County Historical and Genealogical Association. Cheatham County Historical & Genealogy Association
Formed in April 1994 by founding members Thelma Heflin, Jim Allen, Betty Cannon, and Mary Grey Jenkins, the Cheatham County Historical & Genealogical Association (CCHGA) strives to gather, preserve, record,
exhibit and share the history of Cheatham County Tennessee.
CCHGA is chartered as a volunteer, non-profit organization.
The Cheatham County Historical and Genealogical Association holds the key to the past. Because of the CCHGA’s hard work and effort over the past thirty years, both personal and area history are right at the fingertips of those interested in Cheatham County history. The Association has accomplished much since its inception. Some of which are: initiating a contest for the creation of the Cheatham County Flag; establishing a cultural museum; publishing the Cheatham County History & Families Book; installing historical markers; cleaning, sorting & filing old records dating back to 1856; providing educational programs to the public and schools; planning the Forest Hill Cemetery Tour to celebrate the Town of Ashland City’s 160th year of founding; conducting various fundraisers which have included Christmas Home Tours, annual Thanksgiving Bake Sales, yard sales, and auctions; assisting other community organizations such as Leadership Cheatham County and the Veterans Organization with information; maintaining a social media presence; and helping local students needing community service hours. The association also provides several special presentations throughout the year with speakers on various historical subjects. The 2024 CCHGA Board of Directors are President Lisa Walker, Vice President David Davidson, Treasurer Dreama Davidson,
Secretary Rosemary Klein, Assistant Secretary Dolly Corbett, Member at Large George Anne Raines and Founding Member Mary Grey Jenkins.

History of PALS

PALS is the Pond Creek and Lillamay/Sams Creek Chapter of the Cheatham County Historical and Genealogical Association. It was formed on August 20, 1996 at a meeting at the Harvest Fields Baptist Church. The original officers were June Nixon, President and Jim Allen, Vice President. Mr. Allen was one of the founders of Cheatham County Historical and Genealogical Association, and very instrumental in creating the PALS chapter. In 2006 Pals published a history of our community, “Life on the Creeks”. It is a history of our families, our way of life and our love of our community. As of June 2024, Pals has sold over 1,000 copies. The book is still available, by contacting Dreama McCool Davidson at 615-870-9003. After the business part of our meeting is concluded, the members share stories of olden days in the community, and how neighbors helped each other in good times and bad. Oral history is the heart of PALS, and everyone has stories to share. The current officers are Dreama Davidson, President and Treasurer: Betty McCool, Vice President; David Davidson, Secretary.

History of Cheatham County

Named for Edward Saunders Cheatham, Speaker of the State Senate, in 1856, Cheatham County was created by an Act of the Tennessee General Assembly from lands formerly of Davidson, Dickson, Montgomery, and Robertson counties. On Monday, May 5, 1856, the first county court was held at Sycamore Mill. Later, land was purchased on the North side of the Cumberland River which would become the county seat named Ashland, after the many Ash trees which grew in the area. Since 1856, Cheatham County has become home to small-town charm and unmatched beauty of four municipalities: Ashland City, Kingston Springs, Pegram and Pleasant View. The county boasts many sites with a lot of history such as: The Narrows of the Harpeth, Sycamore Mill, Mound Bottom, Cheatham Dam, the Cheatham County Veterans Park, Sidney’s Bluff, Sunrise Bluff, the Cumberland River and the Harpeth River. As well as the physical landmarks, Cheatham County has many well known people who have lived here. Many residents are still actively engaged in farming as they have done for the past 168 years. Today, tobacco and beef cattle produce the county’s largest farm incomes.

It can ___________________________________________________ B EEF CHEESE BALL Jerri Moore ___________________________________________________ 3 8 oz. cream cheese 1 bunch green onions 1 small can black olives 1 jar Armor beef 2 tsp. Accent DIRECTIONS: Chop green onions, olives, & beef in chopper. Mix with softened cream cheese & Accent. Form into 1 large or two small balls. Roll in pecans & wrap in saran wrap & press in pecans.Refrigerate until ready to serve. ___________________________________________________ B UFFALO CHICKEN DIP Chancy Qualls ___________________________________________________ 2 T. butter 4 tsp. minced garlic 4 c. shredded chicken 1 c. hot sauce 1 c. sour cream 2- 8 oz. blocks of cream cheese 1- to 2 c. shredded cheddar cheese DIRECTIONS: Preheat oven to 375°. Melt butter & sauté garlic about 30 seconds. Add chicken & hot sauce & simmer until sauce has thickened (about two minutes). Reduce heat to low & add sour cream -- mixing well. Remove from heat, stir in cheddar cheese. Pour into oven proof dish & bake until bubbling around the edges (10 mins) Serve warm. ___________________________________________________ C HEDDAR CHEESE SAUSAGE BALLS Suzanne Lockert-Mash ___________________________________________________ 1 box Red Lobster biscuit mix 1- 16 oz. package of sausage 1- 8 oz. pkg. shredded cheddar cheese 1- 8 oz. pkg. shredded pepper jack cheese DIRECTIONS: Preheat oven to 350°. Pour biscuit mix into a mixing bowl & stir to get out lumps. Mix the shredded cheese into biscuit mix. Mix the sausage into biscuit & cheese. -- mix. Roll into balls & place sausage balls onto a parchment lined baking sheet & cook for 20 to 25 mins.

Ginger Ale DIRECTIONS: Combine altogether in pitcher & serve cold. ___________________________________________________ C OWBOY CAVIAR OR NEW YEAR’S DIP Kimberly Reece-Roth ___________________________________________________ 1- 15 oz. can black-eyed peas, drained and rinsed. ¼ c. sliced green onions ¼ c. diced red bell pepper 2 cloves minced garlic ¼ tsp. cracked black pepper – salt 2 T vegetable oil 2 T cider vinegar DIRECTIONS: In a bowl, combine all of the above ingredients. Make sure you both rinse & drain the peas, draining alone is not enough. I do recommend doubling this recipe. I mean…you can try it first, I guess. Enjoy! We eat it with tortilla chips. ___________________________________________________ M ISS EVELYN LEE’S CRUNCHY CHEESE BALL Mary Grey Jenkins ___________________________________________________ 1 8 oz. package cream cheese ¼ c. mayo 2 c. ground ham 1 tsp. minced onion 2 T. chopped parsley ¼ tsp. dry mustard ¼ tsp. hot pepper sauce ½ c. chopped nuts DIRECTIONS: Beat cream cheese & mayo until smooth. Stir in ham, onion, parsley, dry mustard, &hot pepper sauce. Cover with plastic wrap. Chill for several hours. Form into a ball & roll in chopped nuts. Serve with crackers

___________________________________________________ C UCUMBER BITES Shirley Noe ___________________________________________________ 4 large English cucumbers 1 pt. grape tomatoes 1 8 oz. cream cheese 1 sm 3.5 oz. plain Greek yogurt 2-3 T fresh dill, minced 1 T ranch dressing mix dry DIRECTIONS: Slice cucumbers ½ inch thick/ Slice grape tomatoes in half. In a bowl, combine cream cheese, yogurt, dill, & ranch dressing mix. Mix thoroughly & add this to a Ziploc bag. Cut corner of bag & pipe onto the cucumber then top with cherry tomato. ___________________________________________________ D AVE’S ALASKA SMOKED SALMON SPREAD David MacMahan ___________________________________________________ 1 hard smoked salmon, preferably sockeye filet 1 container Philadelphia pecan & honey cream cheese 1 box regular cream cheese (8 oz) 2–3 T sour cream to thin (optional) Dash of Worcestershire Dash of Tabasco (optional) DIRECTIONS: Only use a hard smoked candied wild pacific salmon filet for best results (See Dave’s honey bourbon glazed smoked salmon in Main dish section) . Use of commercially available cold smoked salmon, especially farm or Atlantic salmon will get poor results. Remove the skin from the boneless filet as well as any adhering dark meat. Chop fine in a food processor (preferable) or by hand. Knead all ingredients in a large bowl until well mixed, using the sour cream to adjust thickness. Serve with crackers. ___________________________________________________ D EE’S TEA Dee Hall Duke ___________________________________________________ 2 family size tea bags 1 can frozen orange juice 2- 20 oz. cans pineapple chunks 1 lemon 1 lime 1 c. sugar DIRECTIONS: Put tea bags in 3 cups of water, microwave for four minutes in a microwavable bowl. Cover while the tea is steeping. Get a half gallon pitcher. Add OJ & squeeze lemon & lime into the pitcher/ Stir sugar into the hot tea to dissolve. Add to the pitcher. Add water to fill. Freeze pineapple chunks in a single layer & use as ice cubes when tea is served. ___________________________________________________ E ASY CHRISTMAS PUNCH Glynda Johnson ___________________________________________________ 1- 47 oz. can red Hawaiian punch 1 can frozen lemonade 1 can frozen orange juice 5 small juice cans of water ½ c. of sugar 1 large bottle/ liter of Gingerale DIRECTIONS: Mix all ingredients together “except Ginger Ale”, in a gallon jar or punch bowl. Add chilled Ginger Ale when ready to serve.

Use a vase that will hold 8-12 skewers of fruit. All fruit skewers should be above the top level of the base with skewers pushed into marbles in the bottom a vase. Fruit dip: beat pudding mix together. Add sour cream & orange juice, beat until well blended. Water 4 ice tea bags ½ c. sugar 1 can froz lemonade concentrate, thawed. 2 mini-cans (12 oz.) pineapple juice 1 can froz orange juice, thawed DIRECTIONS: Bring water to a boil and let tea bags steep in hot water for 15 minutes, discard teabags. Add sugar to tea mixture and stir to dissolve, allow to cool. Pour into gallon pitcher & add frozen juices. Stir gently to mix. Stir in pineapple juice. Chopped pecans 2 pkgs crescent rolls 1 pkg mini smoked sausages 1 part sparkling apple juice (Martinelli’s) 1 T. of Maypop juice and seeds (strained) DIRECTIONS: Preheat oven to 400°. Grab your 9 x 13 Pyrex & open your crescent rolls. Cut each triangle in half. Twice wrap each sausage in the rolls. Place in Pyrex dish. Melt the butter & sugar, honey, & pecans. Pour over sausages, bake for 15 to 20 mins or until nice and bubbly! Enjoy.

___________________________________________________ M INT ICED TEA Doris Sanders ___________________________________________________ 2 c boiling water 2 tbsp instant tea 2 sprigs mint 1 c sugar 2 cups cold water 1/2 c lemon juice DIRECTIONS: Steep 10-15 min. After steeping, add 2 cups cold water, 1 c sugar, 1/2 c lemon juice. Refrigerate for several days to improve flavor. ___________________________________________________ M AMAW’S ORANGEADE Lisa Orange ___________________________________________________ 1 can frozen concentrated orange juice 1 can frozen concentrated lemonade 1 1/2 c sugar 1 c hot water DIRECTIONS: In a large pitcher, add sugar & hot water, stir until dissolved. Add frozen orange juice, stir until dissolved. Add frozen lemonade, stir until dissolved. Fill the pitcher with cold water, stir well. Chill in the refrigerator for at least 2 hours. ___________________________________________________ P ECAN CRANBERRY GOAT CHEESE Melinda Kemp Rufin ___________________________________________________ 1/2 c finely chopped pecans (toasted) 1/4 c finely chopped dried cranberries 1 tbsp chopped parsley 1/8 tsp cinnamon 8 oz plain goat cheese log 4 tbsp honey or hot honey crackers for serving Mix together pecans, cranberries, parsley, & cinnamon. Spread on a large cutting board. Roll cheese log into coating mixture, press into log to cover. Transfer log to serving platter along with remaining coating mixture. Drizzle cheese log with honey. Serve with crackers. Very festive for holidays. Best at room temperature. ___________________________________________________ P ECAN CRISPS Joan Dowlen ___________________________________________________ 3/4 c brown sugar (packed) 2 T self-rising flour 1/2 tsp vanilla 2 c pecan halves 1 egg white DIRECTIONS: Preheat the oven to 250°. Place parchment paper onto a large cookie sheet. Beat egg white until stiff. Add brown sugar, flour, & vanilla. Stir. Add pecans, stir until coated. Spread on parchment. Cook for 30 min at 250°, then turn the oven off. Allow pecans 30 more min to crisp before removing from the oven.

DIRECTIONS: For best results, prep the night before baking. In a large bowl, mix all ingredients.Roll into 1-inch balls. Place on a baking sheet lined with parchment paper. Bake at 350° for about 20 min. 7
__________________________________________________ S LUSHY PUNCH In memory of Francis Hooper ___________________________________________________ 2 12 oz cans frozen orange juice 2 12 oz cans frozen lemonade 2 large cans unsweetened pineapple juice 5 c sugar 18 c water 4 1 Ltr bottles ginger ale DIRECTIONS: Mix all ingredients except ginger ale. Pour liquid into a gallon milk jug & freeze. Thaw for 24 hours before serving. Add ginger ale to the slushy mixture. Makes approximately 100 servings of punch. __________________________________________________ S OUTH OF THE BORDER Pamela Jones ___________________________________________________ 1 lb ground beef 1 pack taco seasoning 1 can corn 1 can Rotel 1 can tomato soup 1 c cooked rice 1 lb Velveeta cheese DIRECTIONS: Brown ground beef with taco seasoning. Add all ingredients & serve warm. __________________________________________________ S PICE TEA Glynda Johnson ___________________________________________________ 1 small can instant tea 2 c Tang drink mix 1 package lemonade mix 2 1/2 c sugar 2 tsp ground cinnamon 1 tsp ground cloves DIRECTIONS: Mix all ingredients together & put in a quart or half-gallon jar or plastic container with a top. Use 2 level tsp in a coffee cup of hot water. Great anytime it is cold, especially for a sore throat. __________________________________________________ S PINACH & ARTICHOKE DIP Debbie Harlinger ___________________________________________________ 2 pks frozen chopped spinach (drained) 1 can artichoke hearts (drained and chopped) 1 stick butter 1 onion (chopped) 1 8 oz cream cheese 8 oz sour cream 3/4 c Parmesan cheese 3/4 c Monterey Jack or pepper Jack cheese 3 tbsp hot sauce (your choice) salt & pepper to taste DIRECTIONS: Preheat the oven to 450°. Melt butter in saucepan, sauté onions 3-4 min. Add spinach and artichoke, stirring to mix. Add cream cheese & sour cream, then cheeses & hot sauce. Stir until all is blended. Transfer to 8 x 8 baking dish. Bake 20-25 min (covered), then 10-15 min (uncovered) until bubbly and browned on top.
