___________________________________________________ B EST LAZY COBBLER (FRUIT) Glynda Johnson in memory of Bruce Bradley _______________________________ ____________________ 1 c flour 1c sugar 1c milk 1 tsp vanilla 1/2 stick margarine 1 can sliced peaches, chopped into smaller pieces DIRECTIONS: Melt margarine in long Corning ware dish, mix flour & sugar together in a bowl, add milk & stir until all is mixed really well with no lumps. Add vanilla. Pour over melted margarine. Then add peaches, juice and all . Bake in 350º oven. Your crust will be on top golden brown when done. You can use canned cherries too. Add a scoop of ice cream if desired. ___________________________________________________ M RS. KAYTE’S CREAM CHEESE ICING In memory of Kayte Joseph submitted by Jackie Kemp _______________________________ ____________________ 3/4 stick butter softened 8 oz cream cheese, softened 1 1 lb box powdered sugar 1 tsp vanilla NOTE: ICING IS ON PAGE 75: For Mama Carrot Cake DIRECTIONS: Cream butter & cream cheese together, add powdered sugar slowly until creamy. Beat in vanilla & continue to beat until desired consistency. ___________________________________________________ S OUR CREAM COCONUT CAKE Betty McCool _______________________________ ____________________ 1 box yellow cake mix 2 cups sour cream 16 oz coconut 1 large Cool Whip 1/2 cup powdered sugar DIRECTIONS: Bake cake according to box directions cool & split layers and half to make four layers. Combined sour cream, sugar, & coconut in bowl. Mix well & save one cup. Spread remaining mixture between cake layers. Mix Cool Whip with the saved one cup. Frost side & top of cake. Store in refrigerator. ___________________________________________________ C OCONUT CAKE Cindy Burney _______________________________ ____________________ 1 box white cake mix 1 14 oz can condensed milk Sweetened shredded coconut 1 can cream of Coconut similar to cocoa Lopez 1 pt whipping cream DIRECTIONS: Bake according to directions. Use straw poke holes all over, the more holes the better. Gently beat the condensed milk & cream of coconut & completely mix. Pour over cake filling the holes. Using mixer beat the whipped cream until it forms peaks. When cake is cooled, spread whipped topping over the cake. Sprinkle with coconut. If possible make cake day before & refrigerate.
