___________________________________________________ D ERBY PIE Melissa Womack ___________________________________________________ 1 pastry pie shell 2 T bourbon optional 1 c corn syrup 1 tsp vanilla extract 1 c white sugar 4 eggs 1-1/4 cup chocolate chips 1 c chopped pecans 1/2 c melted butter Whipped topping DIRECTIONS: Preheat oven to 350°. Press pie crust into 9” pan. Beat corn syrup, white sugar, & eggs together in a bowl using electric mixer on low speed until well blended. Stir in chocolate chips, pecans, butter, bourbon & vanilla extract. Pour mixture into prepared pie crust. Bake until set 40 to 45 mins. Serve with whipped topping. ___________________________________________________ D EVIL’S FOOD CAKE Carolyn Smith ___________________________________________________ 1/2 cup butter 1/3 c cocoa 2 c flour 2 tsp soda 1/2 c buttermilk 1 c brown sugar 1 c white sugar 2 eggs 1 c boiling water 1 tsp vanilla DIRECTIONS: Cream butter & sugars, add flour, cocoa, soda, which has been sifted together, alternately with buttermilk. Add two eggs, 1 teaspoon vanilla & one cup boiling water. Bake at 350° for 35 mins in a 9 x 13 pan. For icing: 2 cups sugar, 1/2 cup cocoa, 1/2 cup butter, 1/2 cup milk. Cook until slightly thickened (coats spoon ___________________________________________________ F RUITCAKE COOKIES In honor of Evelyn Lee ___________________________________________________ 1/2 c brown sugar 1/2 c butter 2 eggs beaten 1 c plain flour 1/4 tsp salt 1 tsp soda 1/2 tsp each cloves & cinnamon 1/2 tsp allspice 1/2 tsp nutmeg 2 T buttermilk 1 lb candied mixed fruit 1/2 box raisins 1 lb pecans DIRECTIONS: Cream sugar, butter, add eggs, & buttermilk. Add all dry ingredients sifted together alternately with some of the flour mixture for more uniform mixture. Then mix with fruit mixture. Drop by teaspoon on greased cookie sheet. Bake at 350° for 8 to 10 mins.
