___________________________________________________ P ECAN PIE Amanda Pentecost ___________________________________________________ 1 unbaked pie crust 1 c granulated sugar 3 T brown sugar 1 c light corn syrup 1/3 c melted salted butter 3/4 tsp vanilla 1 c chopped pecans DIRECTIONS: Preheat oven to 350°. In a bowl stir together the granulated sugar, brown sugar, salt, corn syrup, butter, eggs, & vanilla. Pour the chopped pecans in the bottom of the unbaked pie shell. Pour the syrup over the top of the pecans. Cover the top crust with foil. Bake for 30 mins., then remove foil & bake for 20 to 30 more mins. Cover it back up with a foil & bake for 20 more mins., until set. Cool for several hours or overnight. __________________________________________________ P ECAN PIE (MAKES 2) Inez Crocker Poole Knox ___________________________________________________ 4 eggs 2 T butter 4 T flour 2 c sugar Pinch of salt 2 c milk Vanilla Pecans DIRECTIONS: Separate yolks from whites. Beat separately. Add milk to yolks. Combined salt, sugar, & flour mix in the eggs & milk. Melt butter & mix. Add pecans, vanilla, & egg whites last. Pour in uncooked crusts & cook slow untill you can insert straw like a cake. When brown, put pecans on top. ___________________________________________________ P ECAN PIE Shirley Walker ___________________________________________________ 4 eggs lightly mix 1 c sugar 1 c light syrup 1/4 tsp salt 1/3 tsp vanilla 1 deep dish, pie shell 1/2 stick butter, melted DIRECTIONS: Fill pie shell with 1 cup pecans. Mix sugar & butter well. Add eggs mix well. Add syrup, salt, vanilla, & mix by hand (no mixer). Bake at 400° for 10 mins. Reduce heat to 325º. Bake until center is firm about 30 to 35 mins. I use a rim cover around the crust to keep it from getting too brown. Pie should be firm the center when done but not hard. ___________________________________________________ P EACH COBBLER Hadley Williams ___________________________________________________ 1 box white cake mix 1 cup milk 1 cup sugar 1 c brown sugar 1 stick butter 1 tsp cinnamon 1 24 oz canned peaches DIRECTIONS: Mix cake mix - milk, sugar, brown sugar, butter, cinnamon & pour into a 12 x 9 baking dish. Add peaches in the middle of mixture. Bake at 350° for 25 to 30 mins.
