__________________________________________________ P ERSIMMON CAKE Nirvana Warren ___________________________________________________ 1/2 c persimmon pulp 1 egg 1/2 c sugar 1c flour 1 tsp baking powder 1/2 tsp baking soda 2 T butter DIRECTIONS: Combine dry ingredients, flour, sugar, baking powder, & baking soda together. Beat egg slightly & add melted butter. Blend eggs, butter, sugar, flour, baking powder, & baking soda into the persimmon pulp & mixed thoroughly. Pour into well greased & floured baking pan. Bake for 40 mins. at 350°. __________________________________________________ P INEAPPLE CHESS PIE Nirvana Warren ___________________________________________________ 2 eggs 1 c granulated sugar 1 T flour 1 8 oz can crushed pineapple 1/2 cup corn syrup 1/4 cup melted butter 9” unbaked pie shells DIRECTIONS: Beat eggs, add sugar, flour, corn syrup, melted butter, & crushed pineapple. Pour into unbaked pie shell. Bake at 325° for 45 mins. or until filling is set __________________________________________________ P INEAPPLE UPSIDE DOWN CAKE Gina Moore ___________________________________________________ 1/2 c butter melted 1 c brown sugar 1 small, canned, sliced pineapple, drained, save juice 10 maraschino cherries 3 eggs beaten 1 c sugar 1 c sifted, all purpose flour 1 tsp baking powder 1/4 tsp salt 5 T pineapple juice DIRECTIONS: In an iron skillet blend melted butter & brown sugar. Heat skillet. Arrange pineapple slices & cherries in skillet. In a large bowl, mix remaining ingredients & pour over pineapple mixture. Bake at 350° for 40 to 45 mins. Cool in skillet & turn upside down onto serving plate. ___________________________________________________ M AMA DOT’S SKILLET CHOCOLATE PIES (2) Julie Gibbs ___________________________________________________ 1-1/2 cup sugar 3 eggs 2 c milk 4 T cocoa 4 T flour 2 T butter 1 tsp vanilla DIRECTIONS: Mixed dry ingredients. Mix beaten egg yolks (reserve whites for meringue) into mixture. Add milk & butter in mixture. Place into large skillet & cook on medium heat, stirring constantly until thicken. Pour to prepared, baked pie shells. Mix egg whites into Meringue & spread on pies. Bake at 350° oven until lightly browned
