___________________________________________________ P ECAN COOKIES Paulette Cothern ___________________________________________________ 1 c pecans halves 1-1/4 c flour 1/2 tsp sea salt 1/2 tsp baking soda 1/2 c butter, unsalted 1 c brown sugar 1egg 1 1/2 tsp vanilla extract DIRECTIONS: Toast the pecans. Preheat oven 350° & line baking sheets with parchment paper. Spread pecans evenly on baking sheet and bake for 5 to 7 mins. until golden brown. Removed from oven & set aside to cool. In a medium size bowl whisk together flour, sea salt, baking soda, and set aside. In a large bowl, cream butter & light brown sugar together with an electric mixer for 3 to 5 mins. until smooth & lightly colored. Add eggs & vanilla extract & mix for an additional minute, until eggs are incorporated. Avoid over mixing eggs. Add dry ingredients to wet & mix for a minute to two until most of the flour is incorporated. Using a rubber spatula, fold in the chopped & toasted pecans. Using a 1/2 T cookie scoop, bake on a lined cookie sheet 8 mins.
